Most of the best guitarists don't get credit because they don't ultra-shred to show off. Slash is the prime example. He wrote beautiful music. Most of it is easy to play. VH and Buckethead are the "best" though, even though neither produced anything as beautiful/elegant as November Rain. Check out Farewell Ballad sometime.
