This comment has made my day! So grateful you took the time to let me know how they turned out. I use the recipe, minus the topping, to make soft white loaves too! 😊
This came up on my homepage suggestions just now. I thought you were going to make a type of bun topping a Mexican lad showed me when I was baking in the Cayman Islands. The topping was made from veg oil flour and sugar. It came out like a sweet shortbread and was surprisingly tasty. I've had a sourdough starter on the go for a few weeks now and have been making sourdough doughnuts, baguettes and I'm making burger buns right now. Simplest sourdough recipe is 5 parts bread flour, 3 parts water and 2 parts sourdough starter (80% hydration). mutiply the total weight of those ingredients by .01 to get the weight of salt.
@@KellysKitchenGarden I did the same recipe as above with the same proportions of milk powder, sugar, and veg oil as the salt. I also added a good pinch of vitamin c powder. The flour weight is 150g strong bread and 100g plain flour.

Just come out of the oven - not as pretty as yours but my oven is iffy (my excuse!). I think I'll do 3 tablespoons of sesame next time for the coating. Just about to do the Minestrone Soup to go with the rolls.
Made these today and they were enormous. My dough mixture weighed 859g so each of the 6 dough balls weighed 143g each and I had to bake them for 28 mins. Think next time I will make 8 at 107g each. Not sure about the topping quantities. I used less than 50ml of water, 3 teaspoons of sésame oil and still runny so added a further 2 teaspoons of rice flour. Will modify ratio till it comes out right. Haven't tried them yet so hoping the 30g of sesame oil instead of butter gives them the flavour I like.

i tried this but the rice four mixture wouldnt go thick no matter how much rice four i put in ... could you please tell me is this normal rice flour or Glutinous rice flour your using. as there are to types one Ie glutinous rice flour makes things like sweet mochi or is it the plain rice flour.. thank you. ? tried twice now adn both times left for over 30 mins and still watery paste.. thanks again .
@@KellysKitchenGarden not good it was my first attempt at bread but they came out like rocks lol I think I was worried about them being raw inside and left them in too long
It’s the lack of gluten in the rice flour that causes it to crack the way it does. I’ve honestly not tried it with any other flour. If you have a high powered blender, and don’t have rice flour, you can make your own. They also make beautiful rolls without the topping ☺️🌱
You can, but you won’t get the distinct flavour that you get from the sesame oil, which is what this particular bread is known for. It will still be delicious though ☺️🌱
@@KellysKitchenGarden You are so amazing, thanks for the wonderful video and quick response. I just put them in the oven! William J. Wyner Oh my word, your comment has made my day. I really hope they turn out for you. I’ve been making bread for a while, but I had a few hiccups in the beginning, but I didn’t give up. I tried to make the recipe as easy to follow as possible. I did mention about adding a bit more sesame oil to taste. The initial bake I did wasn’t quite strong enough for me. I hope you’re all well, safe and healthy ☺️🌱
Wanted to ask you how do you keep them fresh ? The thing with home made bread next day it's not so good . But by the look of them they wouldn't last a day lol 👍👍👍👍👍
deadly 0101 They certainly don’t last very long! A good was to crisp them up again is to pop them in a reasonably hot oven for a few minutes. That’s how I’d refresh them. They freeze well too.
Most excellently engineered. I have taken copious notes and procured the necessary ingredients which I shall add to the culinary supplies of the Secret Survival Bunker, (SSB) hidden deep in the Australian Outback. Upon the breakdown of human society bought on by the consumption of waaaaay to many macdonalds hamburgers and watching too much idiotic fatuous drivel on the television set and when the remaining inhabitants of Australia are eating each other to survive (because they won't know how to feed themselves when the supermarkets close down), I shall be relaxing in the sun and eating jam sandwiches made from your delicious home made tiger bread. Thanks and have a nice day
Converting all the measurements is getting frustrating and I don’t want to put the wrong amounts. Tried using google but I’m getting different answers for each one. On to finding another recipe.
I just made this recipe and it’s not great. The ratio’s of ingredients is not good, the bread ended up looking roughly acceptable but has a poor texture and didn’t rise very well. I made a loaf, and i have to say, this is not a good loaf recipe. It might be ok for buns or rolls though. I will experiment and try to make it good.
madaxe79 Thank you for your feedback. And although yours is the only negative one I’ve received, it’s good to get other people’s opinions. So far as poor rise and poor texture... I think perhaps there may have been other factors at play rather than the ratios. I use the same ratios in my sandwich loaf recipe and I’ve had very positive feedback. But thanks for your time in commenting 👍🏼
Kelly's Kitchen Garden thank you. I Bake often but have never tried a recipe like this before, however, the bread did rise just not like I expected. I will have a play around and alter some variables to try to get it to work out better for me. I found that the finished product was very dry near the edges and very moist in the centre, so the outside was almost overcooked and the inside almost undercooked. Nothing like any of the bread I’ve baked in the past. I believe the issue might be the sugar quantity (or potentially the fact i used raw sugar). I will try again with a different sugar to yeast ratio. Also it’s possible my milk mixture may have still been a bit cool, I compensated for this at the time by letting the yeast activate for around half an hour or so, but they yeast was obviously active, and i did get a rise. Anyhow, I’ll try again and see if i can get it to be how i want it. Another thing to bear in mind, I’m in Australia, so the “tiger bread” I’m used to is probably vastly different to the stuff you’re used to, so to me it seems unusual, when it probably turned out perfect for what you’re used to. The rice flour top worked well, so great work on that, i just have to fix up the texture and it’ll be great. Thanks for the video
madaxe79 Thanks so much for clarifying the things you found didn’t work for you. I’ve learnt that there are so many factors that affect baking bread, and like you say, it’s finding what works best for you and also suits your taste. What I will say though, is that I never experience the unevenness in dry to undercooked. So maybe it’s due to one of the things you mention. I really hope you find your perfect recipe ☺️🌱
Kelly's Kitchen Garden me too. I really think it would make perfect buns like you have made, the outside would be crispy and the centre light and fluffy, but the size and thickness of the loaf just didn’t work for me. I’m thinking (now I’ve had a lot more time to reflect) that it might be a amount of fat. Fat in the milk and the huge amount of butter. I’m going to cut down on the fat content and the sugars next time and I’ll post back what i find
@@ClaudioSilva-tw4lo what? It’s a username. No need to immediately resort to insults is there. Can you please prove that this was used in Vietnam before the Netherlands? I cannot find a single instance of cracked Vietnamese bread. If you can provide a source I’ll gladly eat my words (and bread). If what you’re taking about is Banh Mi, that’s a baguette, not tiger bread, and does not contain rice flour. It’s essentially a myth. The myth states that rice flour is used in the DOUGH, not as a topping, so even if it were true, it’s not tiger bread. At all. Tiger bread contains no rice flour in the dough and Banh Mi has no rice flour topping. Please refrain from being so rude when you clearly don’t know what you’re talking about.

Yummy can't wait to try a replicate your bread
Thank you Sarah! 😊
They look great thanks for the Recipe .could you make soft rolls .
This recipe without the topping makes lovely soft rolls. I use the recipe as a basic white tin loaf as well. Makes beautiful sandwiches and toast :)
@@KellysKitchenGarden thankyou
I have yet to crack tiger bread, most of the ones I've tried off of here haven't quite worked, will be trying these on Wednesday. and will keep you posted. Wish me luck.
Made them today, first ones to work properly. Thank you
My mistake was over-rising before cooking, and not making the paste thick enough.
Such a good vid! I like mail calls and tags and such, but that vid will be rewatched be me and many others for years to come, where as the otheers will not. I really need to get more into baking, you make it look so easy:))
If I can do it, anyone can Ryan 👍🏼 There’s something very comforting about being able to make your own bread. Well for me anyway. It’s another post apocalyptic life skill in the bag anyway 👍🏼😉
Fabulous! 🤩😍♥️
Ooo my gosh they look yummy Kelly, I love tigar bread, you make it look easy will have to try this recipe thanks for sharing , I subscribe to you last week after watching your video's through Tony c Smith channel. takecare 🌷
Gail Thomas Awww Thanks Gail! The recipe really is very easy to make. Let me know how you get on :)
Out of curiosity, have you tried putting the tiger breat paste on a pre-made loaf? would that work? But I see tiger bread pizza is a thing now! :)
Yum. Now to figure out the gram conversion to cup/tablespoons. Maybe I’ll just buy a gram scale real quick off amazon. Love your left hand tats. 💜
Thanks so much ☺️ I wonder if Google could help with your conversions! I have cup measure here because I do follow many US recipes. But often when converting lbs to kilos etc I just type it into the google search bar 😊🌱
I have a kitchen scale that you can change back and fourth. I don’t even bother converting anymore.
matthew I have one that you can switch from grams to ounces, which is great. Can you get one that had cups too?
Can you use corn flour for the topping?
They look fantastic :)
Thank you Kelly.
Alex Hamilton You’re welcome 😊🌱
I love this bread and can't wait to make it ,but is a tbls of yeast right. I just thought that 7 grms is what u need for 500grms of flour.I'm a novice just looking to get it right
Doreen Miller Yes that’s the correct measurement Doreen. Works every time ☺️🌱
Doreen ... and I use the dried active yeast here. Not the fast action stuff 👍🏼😊
yum yum yum… Can you make Chorley cakes?
I love them.. Scone as well.. LOL
I make a cracking scone Tony! Never tried making Chorley cakes. Worked there right before moving to Scotland though!
i tried this but the rice four mixture wouldnt go thick no matter how much rice four i put in ... could you please tell me is this normal rice flour or Glutinous rice flour your using. as there are to types one Ie glutinous rice flour makes things like sweet mochi or is it the plain rice flour.. thank you. ? tried twice now adn both times left for over 30 mins and still watery paste.. thanks again .
Looks yummy 😋😋
OMG, I LOVE your radio😻
Gonna make these in a bit
Let me know how you get on! 😊
@@KellysKitchenGarden not good it was my first attempt at bread but they came out like rocks lol I think I was worried about them being raw inside and left them in too long
TheWiddaC Ahhh! Trust the recipe 😊
If I make it into a tiger bread loaf - is the baking time the same? Thank you :)
Hi! No, it will be longer. If you follow the cooking instructions on my ‘Easy White Bread’ recipe video you’ll get a lovely loaf ☺️🌱
Can only rice flour be used for the glaze?
It’s the lack of gluten in the rice flour that causes it to crack the way it does. I’ve honestly not tried it with any other flour. If you have a high powered blender, and don’t have rice flour, you can make your own. They also make beautiful rolls without the topping ☺️🌱
@@KellysKitchenGarden thanks and yes I grounded the rice this morning. Turned out well.
They came out lovely, makes a nice bread and butter pudding, but you need to cut the lovely crust off.
I can't source sesame oil where I live, any substitute please?
Skip to 1:20 for the start of the recipe.
Valentino Thank you Valentino 👍🏼
Looks good. At first thought were gf. They're not but this is a good recipe for regular gluten bread eaters.
I don’t think I can get sesame oil. Can I use sunflower or corn oil?
You can, but you won’t get the distinct flavour that you get from the sesame oil, which is what this particular bread is known for. It will still be delicious though ☺️🌱
Thank you for replying
On wow, I'm dribbling lol, they look amazing. Please can you adopt me 😍 only joking lol. Well done on a fabulous bake 👏👏👏😁
Thanks Anne! x
Is it 200F or 200c?
Centigrade 👍🏼
What is tepid water???
Slightly warm or lukewarm water 👍🏼
@@KellysKitchenGarden thank you!
Just to confirm, it's 200 degrees centigrade correct??
Yes ☺️
@@KellysKitchenGarden You are so amazing, thanks for the wonderful video and quick response. I just put them in the oven! It's a surprise for my wife who grew up on dutch crunch in San Francisco but hasn't been able to find it after moving to the east coast. I've only baked bread a few times so fingers crossed :)
Have you the written recipe
Please 😊
I shall pop the ingredients list in the description box just now Sharon. Maybe check back in a bit. Thanks for watching and commenting 😊 🌱
@@KellysKitchenGarden you forgot the sugar for the topping :) but thank you for the recipe
Vivianne I’ll fix that right now. Thanks for pointing it out ☺️
Wanted to ask you how do you keep them fresh ? The thing with home made bread next day it's not so good . But by the look of them they wouldn't last a day lol 👍👍👍👍👍
deadly 0101 They certainly don’t last very long! A good was to crisp them up again is to pop them in a reasonably hot oven for a few minutes. That’s how I’d refresh them. They freeze well too.
I was thinking freezing them 😁
Most excellently engineered.
Thanks and have a nice day
Bushman that has absolutely made my day. Thank you so much for watching and commenting 😊🌱
@@KellysKitchenGarden I am pleased to have imparted a few moments of amusement.
Sorry sweetheart the original Tiger bread it's from Vietnam
No it isn’t.
@@Bubble170 what do you know with a name like that
@@ClaudioSilva-tw4lo what?
@@Bubble170 I'm not reading all that sweetheart fuck that make you comments short and simple
@@ClaudioSilva-tw4lo okay…? Short and simple: you’re wrong. Which doesn’t surprise me given the fact you can’t read a paragraph.
Great recipe Kelly, I’ve always thought making rolls was a big faff but I’m guessing the taste far outweighs the effort...can you freeze them? 😊👍
They freeze really well! x
