It’s a binding agent so it helps the kababs holds their shape. Usually in kababs eggs, gram flour, fat, or bread crumbs are you used to serve the same purpose.

and for washing by hands, Mix water and baking soda to make a paste then spread the paste on the affected area, scrub with a nylon scrubber pad, then wash with dishwashing soap. 👍
