That dude who runs the noodle restaurant, probably misunderstood the way you said 'proud'. Cause 'zihao' has 2 meanings in Chinese, being proud or being cocky, over-confident. And by his accent, he ain't from Beijing. #represent

The Zhajiang noodles seem tasty. But Beijingers eat them with garlic cloves rather than yellow ghost pepper, which is from Hainan island in the south. Also, old Beijingers eat a lot of organ meat because it's flavorful and affordable. Try 卤煮火烧or炒肝or炖吊子or爆肚 next time 😉

Small correction at 7:52...Muslim people can smoke if they want. I lived in Dubai for three years and they have shisha bars with different flavored tobaccos. Same in Istanbul.....
As a local Beijinger, I can tell you we never put spicy paste or sauce in Zhajiangmian. The flavor might be still good by doing that, but That’s not a local way to eat it.

Also, any plans to explore Hainanese food? I've seen ppl making vids on Szechuan food, Beijing food, Shanghai food, Xian food, Xinjiang food but I've nvr seen ppl making vids on Fujian, Teochew, Hakka & Hainanese food from China before.
