Massimo serves up a traditional & authentic Neopolitan Italian style Margherita pizza which is a simple Margherita Pizza (topped with just Tomato Sauce, Buffalo Mozzarella Cheese, fresh Basil Leaves), which represent the colours of the Italian flag - white cheese, green basil, red tomato sauce.

Massimo is not an ordinary master but he's also a dough spinning & tossing master, a master who serves up delicious pizzas at his street food stall going by the name of "Pizza Massimo". Massimo uses his homemade Sourdough for the pizza base.
I am in awe of the skills demonstrated by Master Pizzaiolo Massimo who has perfected his skills over the course of over 20 years; first starting in his home town in Sardinia, Italy.
Massimo trades at several locations, on this particular day "Massimo Pizza" was at Swiss Cottage Wednesday Farmers Market in London and his wonderful mobile pizzeria with a wood fire oven.

Once a customer places an order; Massimo quickly and skillfully hand spins and stretches the dough and then it gets cooked in the wood fired oven.
What raises the pizza to a higher taste level is the BBQ style smokey flavour imparted by the wood fired oven.
The actual pizza cooks very quickly, because the wood oven reaches a "sizzling" temperature of around 350 to 400 degrees centigrade, creating a deliciously smokey flavoured pizza.
On the day of my visit, I ordered a Vegan Pizza (topped with fresh Basil Leaves, Tomato Sauce, Vegan Cheese, Roasted Peppers, Mushrooms, Red Onion, Garic Oil, Chilli Oil)

both pizza hut and dominos use electric oven,
