Is there a trick or best way to ignite grill. Mine sorta ignited and burst flame out. I’m incredibly careful and doing things in an amer this should not happen. Also - what exactly did you do to potatoes b4!you placed on grill? Thx so much!!!
Len James I’ve only used a Blackstone a few times. This is different due to the shape and I feel like the heat distribution is more even. Most rectangle flattops I’ve used, including in professional kitchens, have lots of hot/cold spots.

Dang chef, loving this dish! I have a bunch of scallops in the freezer and wasn't sure what to do with them. Thanks for sharing!
