    Did one of these 3 weeks ago on Traeger using plum/almond pellets from Knotty Wood. An AMAZING cut of meat. Cooked it like a brisket, and it was fabulous. Definitely a repeat smoke at my house!!!

      Ive been wanting to try the knotty wood pellets for awhile. The vacio is such an amazing cut of meat though. It needs to be more popularized here in the states

    beautiful job man!!! absolutly great! i live in buenos aires and i have eating tons of vacios.. tough NEVER EVER IN A SMOKER..SINCE GRILL IS KING HERE...but that look absolutly perfectly ..it shock me to know how much perfect it is ALSO IN THE SMOKER... try it with some chimichurri provenzal or criolla sauce too!

      It's all depends on the cut of meat. In this case, vacio is perfect for that. But I would highly advise against it for certain cuts. Vacio, brisket, pork butt, and other big cuts have lots of intramuscular fat and lots of collagen that when cooked for a long times, breaks down and creates gelatin which is super tasty and juicy. You do this to a leaner cut and it would be awful. I really want to cook this Vacio like a brisket tho. Wrap it with butcher paper and give it a 8hr+ rest and see what happens.

      @@CowboyFate I would advise for cooking your steaks. Thats basically what this cut is. Lets be real someone told you that rare steak was good. Nope it taste like medical waste.
      A good well cooked charred no pink steak is by far the best tasting. Its not even close.
      BTW well doesnt mean jerky. Just cook the pink out. Like this is

    Fascinating video! After I saw the Mad Scientist BBQ video, I rushed out and bought a vacio as well, and I cooked it like a brisket, like Jeremy did. I just assumed that mine would suck compared to his, because isn't that always the case? But no, mine was just as juicy as his (and yours was too!), which was pretty amazing. Hmmm, maybe I need to do another one . . . .

      @@SmokestackJoes, haha yes. Basically I need to compare the $16/lb vacio to a $4/lb brisket. For everyday smoking, that's an easy choice. But . . . no regrets that I bought it once, and might do it again!

    Your best bet is buying Vacío at a Latin Supermarket and it’s wayyyyyy cheaper.

      I used to live right near one and they had great stuff but I never saw a vacio there. I am going to see about the places near me if they have them because its a great cut of meat

      @@SmokestackJoes yeah def check out all the new spots in your new home town. The Supermarkets need to be a good mix of Caribbean and South American. If you find an Argentinian one it’s a Homerun for sure.

      Thanks, Its nice to cook some different things other then ribs, brisket and pulled pork. good luck with the cook i'm sure you are going to love the flavor of the vacio.     Looks delicious. I have a Porter Road Vacio in the freezer. Our Patagonian son-in-law (from Punta Arenas Chile) wants to do it over wood coals in the open. Question: How many (normal) people do I need to invite over to eat this monstrous cut?!

      I like how you said normal people lol id say at least 10-15 people easy. It is pretty rich meat so you cant really eat too much of it. Cooking it over wood coals in the open is the way it should be cooked so it should come out great that way

    If cooking on direct fire, I heard fat side down? Correct ?

      There is fat on both sides of a vacio, from what I saw you want the side with the membrane down for the first part of the cook

    $215 Vacio ....expensive? I guess so...I'm a retiree who enjoys backyard cooking... I do want a Pit Barrel tho..

      I agree with the guy who said its insane lol its good but idk about $215 good, maybe if it was a special occasion. I would highly suggest a Pit Barrel though, its my favorite cooker

      The one I have now is the 22" which is great. I started with the 18" though which you can cook plenty on and was awesome.
