  • For this cake I used two 18 cm cake pans.
    Cake is 14 cm high.
    For this cake I baked two batches of the Japanese custard biscuit recipe.
    This is not my recipe.

    Japanese custard biscuit
    Recipe:
    Ingredients:
    butter 50g
    milk 50g
    flour 70g
    eggs 5
    sugar 55g
    Pour milk into a saucepan and add butter.
    When the milk warms up remove from the stove and add flour.
    Knead the mixture with a spoon or a whisk until the dough gathers into a homogeneous lump.
    Add an egg and 4 yolks to the dough, mix with the whisk until smooth and uniform.
    Add the food coloring to the dough.
    Separately, beat 4 egg whites with sugar until soft peaks.
    Gently mix the egg whites with the dough, use silicone spatula. Do not use a mixer.
    Spread the dough evenly on a silicone mat.
    Bake the mixture at a 170 C degrees for 10-12 min.
    Immediately after baking cover the hot biscuit with parchment or baking paper.
    Smooth it with a towel so that it sticks to the biscuit.
    When the biscuit has cooled carefully remove the parchment or baking paper.
