Tried a Robert Herder pairing knife? The carbon steel variants are ridiculously thin and wonderful to use.
I have the folding version. Do you think it’s the same thickness?
I have the same knife in my kitchen only thing I dislike is that it doesn't keep the edge for long time.
I'm pretty happy with mine. Long time is subjective I guess. Mine get used hard and restored easy. But they are also under 10dps so cut well blunt and I can restore to arm shaving in sub 10 seconds most of the time
