Im always reminded of mash potatoe when ever i do my pounded yam. Lol so its great to have real potatoes fufu. I like the quaker oats trick and keeping the potatoes in water so they dont change colour so cool.

Those potatoes with oat flakes it's kind of like Silesian dumplings "kluski śląskie", we're mixing boiled mashed potatoes with some wheat flour but also with egg in order to obtain chewy, gooey balls perfect for meat sauces. It's kind like Italian gnocchi but it's much more softer and chewier.
