    Constance I have never canned chicken. But I have canned hundreds of jars of fresh tuna fresh from the fishing boats he at the beach in Washington. Boy it’s hard work but oh so rewarding to look at in your pantry.
    I’m old and slow but I just can’t seem to give up the joy of canning all together. My kids know that canning has been a huge part of my whole life so they make sure I still do some. Just yesterday I finished up 23 quarts of split pea soup. 5 quarts I canned 18 quarts in the feeezer. Before that was 200 pounds of apples for applesauce and apple pie filling. I do have a true partner in crime. He is my 15 year old grandson. He lives with me. So he is always involved with whatever I am doing. My heavy job boss. His other 2 siblings have no interest in canning except the eating. Haha. I’m just so thankful I have one to pass along the knowledge of home preservation to.

    I processed a few of my birds day before yesterday and canned them today. I can breasts separate, the lighter dark meat separate for soups/casseroles, make bone broth, etc. The leftover bones & meat, I pressure can for the dogs to mix in with their kibble. I also did some beef from a cow my neighbor and I purchased half of, and did beef broth as well from slow cooked marrow bones and oxtail. The dogs got a bone treat. The rest went to the freezer to treat them with later.

      Thank you. Yes, unfortunately UA-cam is notorious for doing this. It has done it to me, with channels I watch regularly. I think they stopped making videos, and it was just YT all along. Very frustrating.

    Love your canning segments. I just finished canning turkey pot pie starter in a jar. and turkey broth. Ive been cleaning my freezers out and canning the meat and meals in jar, plus processed a deer. I only have a little more to can from freezer. but time to take a little break. Lol. Your nails look so pretty. I cant get mine to grow.

      Yes! Last year we bought several turkeys on sale and smoked them. Then canned the meat and made stock from the bones. It’s a great way to save money and fill the pantry.

    Thank you for this fabulous ‘Goldilocks’ tutorial - not too long, not too short, just right! And so informative. I’ve been ambivalent about canning chicken, or any meat, but feel like I can now give it a go!

    I put some herb in just 2 pints of chicken and the taste was so strong. If I do more only salt goes in there. I was told no broth in the jars.

    I need a little more information. Cold canning: cold jars, cold canner, cold meat. You heated up the broth- did you cool it down? If so, to warm, room temperature or what? Another thing that puzzled me-I raw pack chicken adding no liquid and the chicken ends up covered in its own juices. How come your jars don’t overflow? Is the texture of the chicken different when using this method? It’s all so different ( yet, sounds very appealing). I’m sure others will appreciate this information. Thanks so much, Constance!

    How do you clean your wood cutting board, after cutting raw chicken on it?

      It is important for a wood cutting board to be well maintained. Old, dry wood is absorbent, and will draw in juices from food. But a well maintained one will not. After I use my wood board, I wash it with warm, soapy water (never soak), rinse and dry it immediately. Plastic cutting boards are becoming more of a problem because the surface is soft and can cut up easily. The surface gets "fuzzy" and can trap all sorts of bacteria. Not to mention the microplastics researches are finding in our organs, tissues, etc. Just to add, no one in my family has ever had food poisoning from my kitchen 😉

    Can you can chicken that has bones in it?

      Yes, you certainly can. The processing time is different. With bones, it is 65m for pints and 75m for quarts. Pressure remains the same for your elevation :)

      Same here. I put all Christmas away by the 1st of January. Clean house up on 2nd, and start canning freezers on 3rd. I don’t stop until I’m done. Days and days of canning and making broth. Getting ready for planting . I do meals in jars as well. That way when planting starts and long days in the gardens, I can pop a couple quart jars when I really exhausted and have our families version of fast food. There seems to be a season for everything around here. North Texas near Ok border.
