IN THE KITCHEN
Ginger Pear Bran Muffins
2 cups wheat bran
1 cup oat bran
1 cup whole wheat flour
2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 large eggs
2/3 cup buttermilk
1/3 cup avocado oil
1/2 cup honey
2 Tablespoon molasses
1 teaspoon vanilla
2 cups peeled and mashed ripe pears
1/2 cup chopped candied ginger
1/2 cup raisins
2 Tablespoon sugar
1 teaspoon corn starch
Preheat oven to 375'.
Combine brans, flour, soda, baking powder and salt and set aside.
Combine eggs, buttermilk, oil, honey, molasses and vanilla. Pour wet ingredients into the dry ingredients. Mix just until combined.
Stir in pears, ginger and raisins.
Fill muffin cups with batter.
in a small bowl mix sugar and corn starch. Sprinkle each muffin with an even layer of sugar mixture.
Bake for 20-22 minutes or until toothpick inserted in center comes out clean.
Cool for 10 minutes and remove from pan. Enjoy with a hot pot of tea made with pear slices, cardamom pods and black tea.
