well, in real life Japanese and Chinese warrior only fight with honor in 1vs1 fight. Samurais using dirty tactics is normal especially in wars, their honor is loyalty to the master, nothing more
The game's not about historical accuracy. imo, the way the portray the Samurai's honor in this game, while ofc not historically accurate, does a really good job. It doesn't feel like some mystical anime/jedi code. It's their morals and their beliefs, which is what makes the story feel so human
What's honor truly is? Some said honor is follow a path, a set of different rules and codes so you don't fall from that path...other said Honor is actually been loyal to yourself, to your ideas, your perception of good and bad...both lord Shimura and Jin where Honorable. Both only one could survive that fight...

In the end it was more about Jin making people fight for themselves, making the samurai weak and dispensable, thus weakening the shogun's power.
