I appreciate you taking the time to produce this video. Shigefusa has been on my list for sometime. Hopefully I’ll be able to snag one at some point. Keep up the great work!
Thank you for acknowledging that producing these videos is rather time consuming. I do it with pleasure though and will continue to do so whenever I can take the time. I hope one day you'll get your hands on a Shigefusa knife and enjoy using it. It 'sure is an honor for me to use/own mine!
Man your videos have everything in them. The awesome story of the blacksmith/hamono, the cutting performance, the fit and finish, the feel , the looks.... all the bells and whissles. I cant stop thinking though that this Shig really wants a Jnat repolish :) it will be even sexier than it is now :)
I'm not ready for the JNAT rabbit hole. Neither do I have the funds. And I just love the patina on this blade too much. Besides. As I mention in my video, I would not be able to come even close to the original polished finish. I'd rather snag me another Shigefusa as a showpiece on my knife display and just never use that one.
Cool! Have the same Santoku on the way, finally joining the Santoku club Haha! Thanks for the video makes me more excited for the knife, was kicking my self for not grabbing one last year when it was available.
Congrats dude! Snagging a Shigefusa knife has such a special feel to it. Pure Knife Retail Therapy! I kick myself for not grabbing a Nakiri too last year when I saw one available. Couldn't really stretch the funds though, but yeah...next time.
I bet you would my friend. I bet you would... Custom order takes up to 5 years waiting time, finding a Shigefusa in stock somewhere is very hard and unlikely, on the 2nd hand market might be your best shot.
Thank you for watching, and thank you youtube algorythm for making my video appear on your feed. A Santoku knife should be a great, if not the best option as a compact knife for your wife. You should probably go for a stainless steel for easy maintenance too.
I regularly oil this handle (and my other knives with untreated wooden handles) with 3 different oils. Tungsten, Grape seed oil and/or Lin seed oil. Just to keep it protected against water and wear. Perhaps I will make a short video on which oils work good for me.
I was lucky to be on the website of Zahocho in Tokyo at the right time. When I bought it the price was 279 Euro, now it is listed at 299 Euro. zahocho.com/products/shigefusa-kurouchi-165mm-santoku

Awesome as always.
Thanks bud! And for being supportive, as always!
@@chefknivesenthusiast I should also mention, your original tunes are banger!
Loved the presentation. Understand your passion. Same. Sometimes tough convincing family
Hahaha, I can imagine how tough it can be to convince the family to get Shiggy with it. Thank you for your kind words!

Where did you score yours by the way? Also at Zahocho?
Now I want a Shigefusa... Love the video!

Looking for a compact knife for my wife, and suddenly this came out on my feed :D
Nice review, pak!

Fantástico santoku, good video, saludos desde Canarias (España)
Gracias amigo!
Were you conditioning the wood? Can you make a video about that?

Love this, I'm still waiting on my Yo handled kasumi gyuto that I ordered going on 3 years ago.
The wait is the worst part, but you sure have something to look forward too! I really like the Kasumi series, that polish is so beautiful 😍
I enjoy these so much. Promise you won’t morph into a “Vegematic” like spokesperson? Your calm, thorough reviews are just the “edge” I prefer.
Hahaha. I usually never make a promise. But I guess this is a promise I actually could make.
Sometimes I feel like the l knife box should come with a CV :)
🤣 Right?! Sometimes it should. I'm just a sucker for 'the pleasure of origins'.
Boneless meat, boneless fishwork, and soft veggies
And fruits. But yes, the three virtues of the Santoku.
