한국전쟁이후 한국인이 먹는 음식에 대하여 모두들 멸시하고 그 더러워보이고 지저분해보이고 냄새나는 음식이라며 누가먹느냐며 ,해외에서 살고있는 이민 1세대들조차 남의 눈치봐가며 먹어야 햇던 우리의 음식들이 이제는 전세계인이 자연스럽게 즐기는 모습을 보니 무엇인가 가슴깊은곳에서 울림을준다..감동적이다.우리가 옳았음을 느끼게 해준다
또한 한국인에게는 저런 사소한 것들이 큰 감동으로 다가올것이라 믿는다 ..지난 한국전쟁이후 철저하게 외면당하고 무시받아왔던 민족이 지금은 세계무대에서 중심에 서있는것에 한국인으로서 그누가 반문하랴.

You should see him in the Sam Raimi episode. Favreau is a sourdough fanatic. He did the entire segment on sourdough and biscuits. Took Chef Choi's job away from him for almost half the show!
That was beautiful! That literally exactly how chefs cook with their buds. No measuring spoons cleaning up as you go. Dirty towels same blender to incorporate all flavors. Loved watching this!
This entire documentary series exists because Roy Choi and Jon Favreau literally became best friends after they worked on Chef (2018) It's a very wholesome bromance.

This was like boiled chicken+. It's stewed chicken with tons of flavor. A lot of Asian dishes with boiled chicken are so damn delicious, but the texture of boiled chicken skin is revolting.

Agree!!!!! I’m having a good time watching them as well. Seeing their passion for food, the exchange of knowledge, craft, and of course, their respect for each other really make this series something else!

Roy gave Jon super hi-tech rice cooker and when Jon asked if Roy wanted to trade it with Roy's low-tech one, he said no 😂
You see how hard working these guys are even when cooking Jon was locked in..
There is a trick to onions... Keep them in the fridge. Preferably in a container. Outside they dry out slowly and shrink so the outer layers push down on the ones beneath, making them spray much more juice when you cut them. it's like popping a balloon. If you buy produce from a wholesale place where everything has been refrigerated since it was picked, you can cut 50 pounds of onions without crying. In the same way, fresh onions are better (=not dry).
A sharp knife also helps - means lesser cell walls broken. At the extreme it can be compared to breaking firewood with an axe vs a hammer... Both will work, but one is much cleaner.
I love how Seth was sh*t talking about Asian “boiled chicken” but then gets a bowl full and LOVES IT!! Asian braised meat is remarkable!
Seth Rogen must have been so relieved that this was the first time he did a show and no one annoyed him by constantly bringing up weed

for Onions, the best tip is to make sure you have as sharp a knife as possible. the sharper the knife, the less that it will make the juice vaporize and hit your eyes. you can also cut them next to a lit gas burner. If available.
think i'll try roy's buttermilk chicken for easter...quarantine blues haha.

Seriously, if you haven't watched Chef, you should do it. It opened up Jon's love for cooking and sparked a lifelong friendship with Roy Choi. In the first episode of the Chef Show he explained that he missed working with Roy Choi and didn't want to stop cooking and filming with him.

This docuseries is great because at some points during the episode, it stops being about the food and more about three people hanging out and learning about each other while cooking. As everyone knows, cooking and food has this magical ability to bring people together.
