Great video. Many videos breaking down the chuck roll mention the sierra is similar to a flank, but your video is one of the few that actually do a side by side comparison. At $3.50/lb for the chuck roll, it's hard to cough up $14.99/lb for a flank steak.
I need to try all these. I'd kinda gotten away from flank. I've really been on flat iron lately. I might try to get my hands on some flap our outside skirt

Thanks for this video. I was looking for info on the Sierra steak as I recently butchered one out of a large chuck roll that I purchased. I was wondering about it's flavor and best way to cook it. I have always used skirt steak for my fajitas or plain Carne Asada Tacos. Skirt has considerably more fat than the others steaks so more flavor. I use orange juice as the tenderizer and just drink the tequila. Saves money and makes me happy
That sounds great. Do whatever you can to tenderize the sierra, it is a far cry from skirt steak! It is doable, but put it this way, I haven’t had one since this video.
So for outside skirt steak, the only “trimming” you did was rip off that membrane on both sides? It looked like a ton of sinuous stuff was under both membranes

I've always used skirt for fajitas. At $4,300 a pound it's just not practical.
