As a racedriver I know how much they can see and it's deeply unbelievable what those guys see. And they don't see it by words - they just see the lines and say things like "yep, you had some understeer due to too much steering angle."
And you're like "how the hell did he know that?!" 🙌😉👌🔥

I would love to hear from the engine builders! Also, I would like to know what type of work go's into the transmission on these cars?

Produce a lot of data that allows team managers to come to conclusions. This task was formerly achieved by Mr. Robert Sharp having conversations with his mechanics and drivers, the later being Mr. Sam Posey or Mr. P.L. Newman.

How does someone become a Data Engineer? I'm studying software development and would like to hope that I could broaden my field to something like this in the future.

I suppose the bigger question is what knowledge, skills, and abilities do you have to offer them or any other racing team? Make your own opportunities, give them a capability they don't currently have or haden't thought of that would give them a competitive advantage over their competitors.

Right now, if you're in university and not involved in formula student, forget it. in the very upper echelon of the sport, the role of the data engineer and the performance engineer sometimes are intermixed, so you'll need to have knowledge of writing simulations (not the driver in loop types) along with knowledge of data systems and more than a basic understanding of vehicle dynamics to fit that role.
in lower levels of pro racing (say single make GT series, junior open wheel single seaters), you don't necessarily need the knowledge of the former, but def knowledge of the latter as a bare minimum. Obviously more knowledge is better, as it opens more doors for you down the line, but the data eng is basically the second / third guy that works closely with the driver to extract the maximum out of the whole package. The more you know, the more you can help clear off the lead engineer's plate and the more valuable you'll be in the team, esp if the team runs multiple cars and the lead guy looks after more than one car.
