Amazing capture! That looks like a big eel caught and presumably made lunch by the hungry heron! It seemed like the prey was putting up a good struggle, but in the end the bird triumphed and was able to gulp it down that long/skinny neck entirely okay? In the end it appeared the desperate prey was fighting to escape! I wonder, does the sizable eel stand any chance of escaping or even damaging (that wriggling, biting, etc.) the bird's throat/stomach if eaten in that condition?! I would imagine the eel would be scrambling to turn around in the bird's elastic gullet??
Heron has evolved to handle that. By contrast, I've heard people eating live octopus, even when it's in pieces, have choked when the octopus started traveling back out their gullet. Be careful with that sushi...

It is probably an American Eel (Anguilla rostrata), if not it is some type of lamprey. It is not a snake.
