The long, red, fleshy area that grows from the forehead over the bill is a "snood" while the fleshy growth under the turkey's throat is called a "wattle."

Ann, such a great video! So many techniques! Would love a video or glimpse of your cookies drying just to see. I normally dry mine in the frig overnight. Question: on the pilgrim girl you flood over the lines in the bonnet why is this? Interesting technique. Can you see the line after you flood over and dry?
Gabriel, I try to avoid small icing areas as much as possible and like to pipe accent lines to create the illusion of the brim of the bonnet. I did want to make sure my bonnet had the right shape, so I pipe the line to make sure it was all set-up, but then flooded over it to save a little deco time. This is just a personal preference and you don't need to do it that way. I'm just such a visual person and like to see the design. You can't see that line underneath once flooded. I have a list of helpful videos that I want to share (storing icing, storing cookies, freezing, etc). I'll add drying cookies to the list! I hope to tackle some of these in the new year once the dust from the holidays settles.
