    So I just made this dish & the taste is superb. I followed the recipe almost completely. I messed up & spread the cheese over the veggies instead of mixing it in with the sauce first. which left me with a runny sauce in the bottom of the dish after it cooked. So, please do include the cheese with the sauce as instructed. That should thicken up the sauce. Otherwise this dish is delicious & will make it again. Thank you Buck.

      exactly!...really tasty cauliflower, but cheese'll do that...paired it with a little chicken salad and spinach...so the cauliflower dish, weirdly, was the heavy part of the meal

    Classic French roux to béchamel to cheese sauce. Brown the roux a bit more for some Cajun cooking. Agree with susi q that it's comfort food. Maybe reduce flour to make a thinner sauce to spread on more cauliflower for a healthier side?

    Chef Buck I love your recipes but here's a good one for cauliflower I steam cauliflower in the microwave we're just about a spoon of water in the bottom comes out great then afterwards I take a stick of butter and I found it in the pan add bread crumbs and pour it over the cauliflower it is so excellent try it you'll love it thanks

    What can you use instead of flour to thicken up the the sauce ,I'm on a low carb diet so flour is not allowed, no corn starch either, any suggestions?

      Karla: you can use Arrowroot powder to thicken the sauce. I use it all the time. Works great.

    This looks amazing. I have a cauliflower in the fridge that is just begging for this treatment tonight! I have a question. I know you make some meat dishes, but are you and Camera Girl mostly vegetarian? I would love for you to do a video about your eating habits. I'm very interested in your portion size as some of us here in the midwest tend to super-size every meal! I grew up with the old ways of 'meat and potatoes, clean your plate'. Tryin' to change, Chef Buck!

      thanks! ---that's how I grew up, too--big portions! ...CG and I both grew up in the Southeast where portions are big and a lot of it is deep fried. We never ate out when I was a kid, but my mom always fixed huge dinners, and eating seconds at dinner was just a given. Lots of meat and potatoes when I was a kid. And bread. I think eating culture in the US has changed so much in the past 50 years...eating out at restaurants is more common...and the restaurants in the south reflect those southern portion sizes; it seems like every other restaurant in the south is a buffet. Up here in the Northwest, in Seattle, there are very few buffets, and definitely a lot less fried food in the culture. It's really noticeable when we go back down south to visit family, not just in the food we see, but in the sizes of the people doing the eating. CG and I have tried to eat better as we're getting older, and we do...but we still eat all the foods we grew up with, just in smaller portions. I've worked in restaurants most of my life, so food has been a hard thing to get away from...not that I've tried. But I used to eat biscuits and gravy once a week, now It might be once a month. We've cut back a lot on pasta, and now we substitute spaghetti squash for a lot of pasta meals...although we still do eat pasta...just not as often, and not as much...I wish I could say the same for pastries, but we live around a lot of convenient bakeries and coffee shops, so we eat a bit too much of the baked goods. I'd say we're vegetarian half the time...it's not unusual for us to have meat-free meals several days in a row. But we like so many kinds of foods, and we like trying new things, so ultimately nothing is off the table. I think the biggest dietary change we've made in the last few years is cutting way back on bread, potatoes, and rice...all things we still eat, but in smaller amounts, and hopefully only once or twice a week.

    great recipe I have another cauliflower recipe for you I steam my cauliflower and then I take a stick of butter and melt it and brown it a little because you can want brown butter two that I add some bread crumbs and brown them a little take it and pour it over the cauliflower trust me I could eat the whole dish absolutely Grand thank you God bless by the way what's Cara girl's name

      this is one of the most uncauliflowery cauliflower dishes, especially if you steam the cauliflower before, it'll soften the cauliflower more and mix well with the topping...and strong tasting cheeses will dominate the cauliflower...I used some smoked gouda and parmesan in this video, which easily prevails over the cauliflower

      Anjum, if the issue is gluten, you can now get gluten free flour. There are other flours like rice flour or potato flour & many others.
