Are you sure that proxy servers perform NAT? I ask because from some readings, the proxy servers can hide IP addresses for privacy across the network.

It can but it is not normally designed for that purpose.

Do we still use proxy servers nowadays? Probably still so, but many thanks for explaining bypassing the firewall. I believe many Chinese would use proxy to bypass the government's great firewall. :)
