      what is substitute for ghee and cocoa butter? can we used vegetable shortening?

    • @ish_kitchen
      @ish_kitchen  2 роки тому

      @maria cecilia alcantara vegetable shortening is not a recommended substitute, as chocolate making needs fat. Try adding a small amount of vegetable oil, butter, using shortening will melt into the chocolate and make it thinner.

    Followed exactly the same recipe except that I used vanaspati instead of cocoa butter and my Dairy milk turned out to be soooo delicious! Only thing, it didn't feel as smooth as the original one and I cud feel the granularity of the icing sugar on my tongue. Hope next time if i make it a little more fine power the texture may improve. Anyway thanx a lot for the wonderful recipe 😊

    For stocking in a shop for long time what preservatives need to add?

    • @ish_kitchen
      @ish_kitchen  2 роки тому +3

      Hello Lijish
      Milk and white chocolates have comparatively shorter shelf life can only last 3-6 months, this is because of its milk content present in the chocolate which may tend to go bad.
      But in case of pure and dark chocolate it does not need any preservatives. If stored properly, dark chocolate does not have a shelf life. At the least 2 years from the date of preperation.
      And the regarding preservatives Titanium oxide has been used commonly as an additive in processed many processed food since long time.
      I am not an expert just sharing my comments for your understanding.

      Almost similar - but to get the actual taste we need to put chocolate mix through a process called Conching. This is done mostly in factories.

    Mam my daughter has lactose intolerance can u pls suggest substitute for milk powder

    • @ish_kitchen
      @ish_kitchen  2 роки тому +1

      Hello Thamizh - thank you for your comments, strange but … mostly milk chocolates have such low milk content that it really shouldn’t make a profoundly lactose-intolerant person uncomfortable. As a alternate you can try dark chocolate or soy chocolate or even cocoa powder/syrup (hot chocolate like syrup) which doesn’t contain dairy.
      Please also take advise of a doctor or dietitian as kids health matter the most.

    What is icing sugar ?? What can be used in place of cocoa butter?

    • @ish_kitchen
      @ish_kitchen  3 місяці тому

      Icing sugar is powdered sugar or which is finely ground sugar mixed with a small amount of anti-caking agent, such as cornstarch, to prevent clumping. It's commonly used in baking for making icings, frostings, and dusting over desserts for decoration due to its fine texture and quick dissolving properties!
      The alternate to cocoa butter you can use, coconut oil, clarified ghee, but in room temperature solidification is affected. So be mindful.

    • @ish_kitchen
      @ish_kitchen  2 роки тому

      Icing sugar will be available in shops, as a substitute you can use powdered sugar.
      note : while powdering sugar, it should be powdered in very fine texture else you will get granularity in the chocolate mix.

    • @ish_kitchen
      @ish_kitchen  3 роки тому +1

      Hello Lekha, thank you for trying the recipe.
      granular structure is because of sugar that is not powdered well,
      I recommend you to take small sugar, in a mixer make it powdered and sieved it well to have fine and nice smooth texture (Icing sugar)
      As this chocolate is made in double boil method, sugar will not melt as expected.
      Good luck.

    Hi Harshitha, I have 2 questios: 1)regarding someone's question below, you approve that butter can be used instead of cocoa oil. Wouldn't butter make the chocolate melt easily when touched by hand? 2)İn your recipe, cocoa butter and ghee is mixed. Is ghee like butter - hard in refrigerator and soft in room temp? Or is it hard and solid in room temp similar to cocoa oil? Or does ghee not help at ll in making the chocolatehard and we totally depend on cocoa oil for the hard texture? We need chocolate to have hard texture. I tried butter but it didn't work, it made chacolate soft and melt easily. Is ghee different? does it work to keep chocolate hard n room temp and at least 1-2 min in our hand? Is it better than butter to make chocolate hard? why do we use it? Thanks!

    • @sweet_santa
      @sweet_santa 2 роки тому +3

      Cocoa butter is different from regular butter. Regular butter melts easily while cocoa butter still hard even on room temperature. So use cocoa butter.

      Step 3 is to mix the prepared powders to the oil in double boiling technique.
