I just bought one of these at the carniceria and didn’t really know what it was. My husband said “What is this?” I said “I have no idea”. He said “Well then why did you buy it?” I explained “Well it might be my next most favorite thing!” We are having tacos tonight and will include this. Thank you!

I love chayote! It absorbs flavors beautifully, adds great texture, and sweetness. I like to add roasted chayote to a stew full of roasted green chiles, garlic, and chunks of pork shoulder.

Rick, I am from Mexico City and never learned how to cook Mexican food, I've been watching your videos for years and you pretty much inspired me to start cooking Mexican food, for some reason I always thought it was too complicated, but you make it so simple and doable. Thank you so much!

Delicious! I added cherry tomatoes to the roasting pan, then just ate it in a big bowl. First time ever
    having chayote. Thanks, Rick!

Hi Rick thank you for showing the richness of Mexican food, like you said you don't need meet to eat something good. My.Mom used to make scramble eggs with chayote, used on caldo de Pollo, and just put some Mexican cream and salt where simple and delicious meals. Love your cooking Rick🥰

They call those chokos in Australia. My dad used to cook them on a hotplate and add curry flavours to them. He also boiled them in a sugar/honey syrup for a dessert

I am going to roast my chayote (maybe use a different oil) and then season it with cinnamon and a little sugar, perhaps make some kind of streusal topping for it, and see if it can substitute for apple crisp with reduced carbs. Thanks for the idea!

Great recipe for chayotes, thank you. Traditionally we use to eat these at home in a very well seasoned tomato cream sauce with lots of onions, and yes, these were also pre roasted in the oven and then "guisados" in the tomato sauce for some time. Really delicious!!

I sliced into thin wedges and stir fried in a little bit of olive oil, delicious. Also, sliced into wedges, drizzled olive oil and cooked in my iron cast ridged griddle. Really, really good as a side dish. Do the same to zucchini and yellow squash, onions. Very good.

Yes Rick, I have been doing Chayote a lot lately because it has much less carbs and starch than potatoes. I stir fry it with other veggies. I also have it with Chorizo & eggs. Now I can have some in tacos 🌮. Thanks! Try making keto recipes. Can't find a good Mexican keto Cookbook. I am improvising.

Definitely saved mine. Literally has antioxidants and other great benefits to it. This guy is right about one thing though, really bland BUT cooks closer to a potato even though it still spoils like a squash.
If you cook it with any kind of meat it will just absorb the flavor of it too. Great in soups
