I love Pinot. It is a fantastic red wine to reduce into a sauce with fish, as very few red wines can be, because it is very balanced, not overly fruity, not overly acidic, just enough bitters, but nothing overly bold and brash. It is, as you say, “elegant” and “lush”😉 And this pays off, of course, in the drinking experience!
