I love that you showed using the old cauliflower! My biggest gripe I have is I always have veg waste in my fridge because i inevitably buy too much and don’t get to everything fast enough. It would be nice to have known that I can simply cut off the “oxidized” part because I always assumed it was mold. Please please as our economy gets crazier there’s going to be more need to extend the life of the food we keep. If you have more tricks on how to make things last or use them after they’ve gotten ugly (if they’re still edible) please please share your knowledge. 💚
My favourite 'reduce food waste' thing is to make a veggie draw clearance soup. Start with diced onion / shallot / leek (and garlic if you wish) and sautee in olive oil. Then add chopped / diced whatever needs using from the veggie drawer... squash, cauliflower, broccoli, french beans, carrot, cabbage - maybe a couple of small potatoes. Add veg stock (or mushroom stock) and cook until tender -20 mins maybe 30. You could have it like that or blend it. I use a stick blender as my wife prefers a 'non chunky' soup... I'll often then add a tin of mixed beans. Soup for 2 people for 3 or 4 days. Sprinkle a little chpped coriander or parsley into each bowl as you serve... Simple and nuritious lunch - or even a inner with some garlic bread - and saves on food waste. Gotta make one tomorrow.

Derek, I am amazed at how much color you created on the lions mane during the prep. Many chefs use paprika to color chicken breast when pan searing. Your mushroom just accumulated beautiful color roasting it.

Maybe an acknowledgement that this would be a very special occasion for many of us. Modest income folk get constant reminders of our position in society. Not long ago, I couldn't understand why your channel only had around 130,000 subscribers, especially when other, less impressive vegan cooking channels had so many more. For what felt like ages, the numbers remained constant! Now they’re finally rising, and it feels like a victory for quality content. However, there's something about these exponential growth curves - in subscribers, revenue, or even business in general - that doesn't feel right. It raises a moral question: why isn't quality itself the factor that’s rewarded? Instead, we seem to live in a system attention alone generates even more attention, regardless of merit. In a fair world, channels like yours, full of genuine value, would naturally rise to the top, while those lacking substance would fade out. But instead, we see a feedback loop where high clicks lead to even higher clicks, more ads, more sales, and so on - an endless cycle that rewards visibility over substance. Derek, I went to Taiwan and had fresh mushrooms in my vegan meals 3 x a day. Such a large variety of mushrooms! Some had a texture very much like meat, but alas, no one knew the English name. My mouth is salivating!!!! I have done the regular li I ns mane searing method. The taste is remarkable and can become addictive. Technically being a no oil when I cook i had to do this one with oil. Just delicious! I still need to find a more reasonable source for the lions mane. Here where I live, it is 28 a pound. 🙁 So it truly is a treat when I make it. 😋🙏😎

As someone who's always avoided vegetarian meals due to lack of experience and medical issues that make meals with long preparations difficult (i can do prep in advance but it has to be several hours before I'm able to eat, which means i usually eat things cold or reheated), being able to hold something in a "only takes 5 min to take from holding to ready to eat" state makes me incredibly interested in trying this out. I'd have to see what mushrooms i can get here that'd work like this but this is very intriguing.
Work days with Derek and Frankie make me more productive; we take short COD zombie breaks, and I get to eat the best food in the world.

Derek, I went to Taiwan and had fresh mushrooms in my vegan meals 3 x a day. Such a large variety of mushrooms! Some had a texture very much like meat, but alas, no one knew the English name. I hope you will help us source mushrooms like the ones you are using once you are settled in the US again. Welcome home!

I have done the regular li I ns mane searing method. The taste is remarkable and can become addictive. Technically being a no oil when I cook i had to do this one with oil. Just delicious! I still need to find a more reasonable source for the lions mane. Here where I live, it is 28 a pound. 🙁

As someone who's always avoided vegetarian meals due to lack of experience and medical issues that make meals with long preparations difficult (i can do prep in advance but it has to be several hours before I'm able to eat, which means i usually eat things cold or reheated), being able to hold something in a "only takes 5 min to take from holding to ready to eat" state makes me incredibly interested in trying this out. I'd have to see what mushrooms i can get here that'd work like this but this is very intriguing.
