One useful tip is to not let Sombra always escape, if you're with a half assed decent team, you should be able to encourage them to chase her with some shots in her direction. Killing Sombra a few times will discourage her to keep trying to pick on you (or any other support) and will start to jump in the team fights, where she's not as much as a bother than in your backlines.
My tip as a genji main is to keep distance, he will waste more time closing the gap and if he dashes you can use guardian angel. If he dashes before the fight he basically only has deflect to escape to his team. Now, during the fight I don't think mercy is a good target (I might be wrong) because of how hard it is to hit her unless genji has high ground. Never get close to a highground with genji (or anyone) unless you do it with someone else.
