It's a teardrop border. You pipe a teardrop shape and when finished you start piping the next one on top of the end of the first one. These are really beautiful. I love the designs. I am trying to work with royal icing and every time I make it, it always seems like a new adventure. I have found that living in the southwest we have very dry air, no humidity, and the consistency of the icing can be very different than what the recipe asks for. I have had to make this recipe over and over again. Do you have the same problems?
Thank you Roslyn. I live in Kentucky, where too much humidity can be the issue. I can not really give you a good advice for low humidity as I never worked in that condition. You might want to ask Georganne from Lila Loa. She lives is Utah, so she probably has more experience.

I have never been to Oklahoma, but I am currently looking for new locations to fill my schedule. @@thomasszymanski1107 Yes. If you take your spoon out of the icing and turn it sideways, only the end of the icing peak should bend down.

What brand of red coloring do you use ?
When I made these, I used Americolor Super Red. Any red gel food coloring would work.
It would be nice to see the finished cookie for just a little bit longer after you finish them
