Yum, those nuts came out looking wonderful. That's the same way I roast cashews, though for coating them, I put them in a big ziploc bag with the oil & salt and shake the -sh..- heck out of it 😀 Oh and your oven being finicky wouldn't worry me as, call me crazy, but I actually prefer the slightly burnt ones.
why do so many people believe they need to add oil for roasting cashews? They can be roasted very satisfactorily with NOTHING added. No oil. No salt. Roast the cashews enough and they taste like crunchy caramelized yam.

You can use any oil you enjoy!
