I have a take on these I do poblano stuffed with smoked pulled chicken,cheese and chopped bacon....like a stuffed bell pepper with some heat but I’m gonna have to try this....👍
Just for fun try two options First, try adding some pulled pork to the cream cheese mix. Preferably some that you cooked on the smoker. Second, try putting your rub on the chicken breast before wrapping with bacon, then a small dusting on the outside of the bacon.
Question for you, or the group: My dad is allergic to red meat (any mammal), and I'm curious: Any thoughts on a replacement for the bacon to get the proper fat content and crunch?
If you poke a hole in the end off the peppers before you stuff them, it will let the air escape and make them much easier to stuff without splitting.

You can't really. You can follow this recipe in the oven but you'll miss out on the smoky flavor. Follow the same time and temp.

Just reverse sear the chicken after it reaches her 175° temp. Hope that helps.
