For those having issues with the baby turtles going into the collection area (three years later...): I found more success breaking the trapdoors and slabs blocking the entrance (so there is a 1 block gap) and keeping the adult turtles away with some pillars 1 block apart in front. This lets the baby turtles pathfind easier to the water instead of just tposing in front of the trapdoors, which I can only assume is some buggy AI. I also ended up extending the water to be two blocks tall (moving the sand and hopper area 1 block lower) and adding another row of signs since apparently turtles pathfind to 2 block deep water. It's now working underground for me, thankfully!
yeah bcuz of entity cramming, you could disable it, but without entity cramming, the farm would be really laggy edit: if you're only joking and already knew that, just ignore this

I have not been able to get this to work at all on 1.18.2. The babies won't go over the trapdoors or under the slabs, even when I try to lure them with grass. If I get rid of all that and lure them into the trap manually, they stay there when they grow up, they don't die or glitch out.

You can try extending the area of where the hoppers are. Make it into an area that adult turtles can fit. Have trapdoors from blocking them going into the sea and open it manually once they grown up for them to go into the ocean
So I want to just set up a passive collection thing that gets me enough scutes to make 2 helmets and a handful of extras for the potions, and let the turtles go/not kill them after, but literally every video turns into kill. Would the best way to do this just be to increase the size of the collection area by a block or 2 so that after I get the 15+ scutes I can just deconstruct the farm releasing them?

The seagrass harvester doesn't work for me. I'm on Bedrock 1.19 on an iPad. The 2 clicks of the lever don't start cyxling the dispensers. So then I make a flip flop using two observers, which cycles the dispensers just fine, but I don't understand how cutting a single seagrass is supposed to generate more of them. Maybe the bone meal isn't doing what is intended. I just end up cutting the existing seagrass and collecting it back up. I have no idea how that machine is supposed to generate more seagrass.
If i dont have silk touch and i do trap the turtles inside the farm, wont they try to escpape to put the eggs out of the fence just like the first one they put? Or can they put it in like an area formed around the place where the turtle spawned initially?
Same here. I'm on Besrock 1.19 on an iPad... maybe it's not compatible. But it seems like I just need to put two observers facing each other to cycle/flicker the redstone to spit out the bonemeal. I'll be trying it to see.

it does not work, I built it the same way you did and the baby turtles just dont go into the ocean area like you said. Instead they grow up on the sand and I dont get to collect the scute in the hoppers from below. I had to place new ones on top and when the babies hatched I have to manually push them in the water myself.
If you're able to collect the eggs with silk touch, then you can place the eggs on sand in any biome and it'll work the same (since turtles decide where to lay eggs based on where they hatch). Just make sure to make a water pool at least 2 blocks deep to attract the babies.
probleme is if its not a sea biome the turtles dont try to go for the water for some reason im on a mesa biome and the turtles dont give a sht about the water
i had to try like 7 diffent times at 7 different placements in the same location before gaining somewhat of a result but sometimes the turtles just stop going in the water and just grows in the sand and theres a huge amount of them in the same space

yeah basically i used sea grass too. But it looks like they will swim to water or ocean, whatever, in this video,and mines just stayed right there.

I water logged the slabs closer to the ocean and that seemed to fix it

It can be that your farm is too close to the ocean so they stay on your beach instead of pushing through

Not necessarily. If you have silk touch and can harvest eggs, you can construct this anywhere. Just gonna have turtles popping out of it.

Yeah, you need to find an area, where turtles were spawned, otherwise they won't lay eggs
