That smile at the end says all, I'm trying this during this weekend. I got about 1.2 pounds of rainbow trout filets and a pound of walleye filets (just for my first try experiment on a pellet smoker). Thank you for the good information about brining, that was a step I looked over.

@@Armadillopepper it was amazing my dude, I added in a salmon filet, same brine for all but different rubs for each. Over some rice with asparagus! Can't wait to do it again

I should try that. I do have a trout in the freezer, but I think I'd try salmon fillets. Thanks to your reminder, I'll do my best to oil the rack. Now I just need to have more time off work so that I can plan to do anything.

@@Armadillopepper Around here, they have to try to avoid work. It seems that every place you go or pass by when driving has a sign out seeking employees.
@@handcannon1388 I owned a chocolate company a few years back where we made high end chocolates. The hardest part of that biz was getting people who would actually work.
@@Armadillopepper I didn't know that. Did you ever do chili-pepper infused chocolate? I've never tried it, though I do like dark chocolate with a little orange or raspberry added.
We did. We made a Mayan truffle which had cinnamon and cayenne.

@@Armadillopepper looks good Jeff. I think that I'm going to stick with the rainbow trout recipe this time, but I will be using the sauce from the catfish recipe. That just looked perfect. = )
Okay...on the Bradley, with pecan wood. Turned out very nice. Flaky, not oily,(which surprised me because catfish is a lot more oily than rainbow trout), and the pecan smoke worked very nicely...... The sauce from Jeff's smoked catfish recipe is required. That really kicked it over the top. I didn't have any habanero sauce, so I used the Tabasco scorpion sauce......... Careful with that one it's extremely dangerous/fun, (2,000,000 on the scoville scale, Tami will like it). I took a bite, and did a little dance just like Jeff does it was so good......= )

when i brine, i add everything in the pantry. lol..when i brine pork butts/shoulders, i usually brine them for five days.. fish, obviously not so much.. ill have to give this a shot.. thanks.. speaking of shots.. we need Weekend Bartender to make an appearance.

That is why I prefer to hang my fish as I smoke them. no sticking at all ever.
Do you leave the skin on, so the fish won't fall of the hanger?
@@Armadillopepper Skin on, head on, bones in. Just gutted and butcher string looped around the head and some hangers bent into S shape for hanging.
