    It was a simple but effective video. I learnt to add the tray later on to rest them. So yeah. I did lean but I just love looking at smoked meat. Making a brisket this weekend and I’m so excited. Just bought 18 mesh grain pepper, always crushed my own so hoping this adds a better bark.

    These beef ribs have been in the Birmingham Costco for a good 2 years now, they do chop them up individually every so often but you can request to have them left whole and they'll pull out a pack for you.

      They do the same in U.S. stores. One needs to ask the butcher.

      ​@CoolJay77 We have a Sam's here and they cut these down to make "short ribs". You have to make friends with the meat guys to grab a couple slabs before they cut them down. Same with tri tip.

      butcher while at the store.

    The perfect recipe I was looking for.
    200 F 2-3 hrs
    275 F 6-7 hrs 205 F internal temp
    45 mins rest w/ added tallow -150 F

    Another Texan here and I can confirm ... Beef Ribs, especially Dino's are the next greatest cut other than Brisket.

    Tried various places for beef ribs! John Davidsons online butcher are good, although I don't like how much plastic / polystyrene everything is delivered in. Managed to get plate ribs from the Ginger Pig (have to ask nicely and they will go downstairs and bring them out in their vac-seal) - delicious but expensive! Usually £12-18 a kilo. Local butchers always seem to cut them down so short... will have to give Costco a go!

      My go to is the Wexford valley ribs from Tom Hixson. They’re Irish, and always cut thick and super long bones! Maybe try those if you don’t have any luck at Costco!

    Enjoy your vids. You should have thrown those ribs on the Chudbox - same rub, no wrap, hot & fast - highly recommend. Perhaps that second rack... Chud has an older vid on it for reference.

    Beef Ribs look great. Found you through Chud's channel a year or so ago and love the channel. I've seen some recent videos where people mix wood chips in with their pellets to amp up the smoke flavor. Not sure if you've tried in the past but would love to hear your opinion.

      Ooh I’ll have to look into it. I know the augers can’t be temperamental at times, so I’m not sure I would trust myself adding something other than pellets! But I’ll take a look for sure

      @@WilsonsBBQ I believe the chips were designed for lone star grillz pellet grill. Not sure of their auger specs, but imagine would work in other cookers too. thanks for taking a look.

      @@josephlaggis8039 I wonder how well they work in other brands without jamming. There are positive reviews of wood chunks being used in pellet grills. I can think of couple brands that integrate it into their grills. There
      is a smoke box called The Flip Professional Hot & Cold Smoker Box. one can mange to keep wood chunks to smolder for couple hours, or one might get other stainless steel smoke boxes and modify to work the same way. One can concoct one at home, perhaps building a smoke cage and layering wood chunks in between lit coals.

      I happened to be using bear mountain hickory pellets on this cook. They’re a good brand from what I’ve use so far

    What pellets are you running with? I’ve got a Traeger and haven’t gone outside of their offerings yet in case it damages it. I generally run hickory as it gives the smokiest taste I’ve found, but the brisket blend ones are also good.

      These were bear mountain hickory pellets. I’ve never used the treager brand, as I haven’t heard great things about flavour. My go to has been GMG Texas blend and these bear mountain hickory. Both seem to be some of the better ones I’ve used!

      @@WilsonsBBQ I have had good luck with Traeger, and found the Weber pellets to be pretty good. TBH though, Costco has their Kirkland brand pellets 1-2 times per year. Its tough to shy away from a 40 lb. bag for about $15...

    I wouldn’t cook any protein on a pellet grill and serve it to my dog. Pellet ovens are outdoor ovens providing very little smoke profile. If you don’t have eight hours to devote to this beautiful cut of beef, please drive to your local BBQ shop where they have the time. Cheers!
