I've never made frosting using this extact technique, but I for sure will try it! I also loved that you dyed the typical 7 Minute Frosting using different colors instead of just leaving it white. You always seem to come up with the most creative ideas! I don't know if you remember me, but I was the girl that you met in Miami (at your book signing) and I asked you for a ton of youtube advice. So it stays at a near runny-but-never-runs consistency? I was imagining something like actual marshmallows. Maybe it gets the name because of the glucose type sugar used to make marshmallows & how soft it turns out? Congratulations on your pregnancy BTW.

if i was frosting a four layer cake would this work on the outside?
Emily Jane no. Too soft and floppy. You'll need a buttercream that is stiff enough to hold the sides and not slide down to the bottom.

Is there anyway to substitute the corn syrup or the glucose?
I don't use the syrups, but cook the sugar in water until slightly thickened then add to beaten egg whites. The hot syrup cooks the eggs whites to be safe to eat.
Made the recipe but I half if next time I'll try less sugar because it's good but to sweet for me

Angi Tig once put onto something it forms a light "skin" (like custard), so best used quickly.
