@tcuplvr it's called a dough sheeter. It's much bigger than a pasta roller, but it can't roll as thin as a pasta roller. I've rolled pie dough in it as well, it works so well. Look for the Eugene Dough Sheeter on Etsy. There is an electric and a manual version. Mine is the manual one and works like a charm, even with my dough, which is super stiff. 🙂

Amazing! Thank you for sharing. I just became a subscriber after watching this video. I had a Kitchen Aid stand mixer for over 30 years. Then I bought an Ankarsrum. After ONE use I got rid of the Kitchen Aid. The Ankarsrum is the best mixer I’ve used. No more stopping the bowl to scrape down the sides. The Ankarsrum has a bowl scraper attachment. I LOVE my Ankarsrum. I cannot say enough good things about it. Since you bake a lot, it would be a great thing to have. No, I’m not affiliated with Ankarsrum, I just love it! 😀❤️

I could tell you were in Canada when you said prOcess, that O is a dead giveaway, then you measured in kilos 🥰 I’m in the US but only a couple hours from the boarder. I’m an unemployed nurse and not sure if I want to go back, I’ve been considering getting licensed to bake out of my home. Years ago I had a pie shop. No one in my area does cookies like these so I think they would do well. My daughter does the farmers market and they just tried the first winter market and it went very very well for all the vendors !!! I’m thinking I need to get my rear busy ! Is there a reason you decorate upside down or do you just do it for the camera ??? Blessings

And yes, I measure in kilos and grams, but a lot of Canadians still talk about pounds. I'm just a stickler and try to always use the metric system. :)

@kathleensarachinsky1460 - I've tasted them, lol! They are delicious and I use a recipe anyone would use in their home kitchen, so I'm going to say that they taste homemade. The great taste is what has my customers coming back year after year. 🙂
I'm wondering about the dough recipe you're using that allows you to stack raw cookies like cardboard and have them remain stiff and flat for several minutes, flapping them onto the sheets like poker chips, and how they retain their shape through all that and even after baking.
So I don't give out my recipe, but yes, my dough is very stiff. It comes from a combination of using pretty cold butter (I soften it in the microwave instead of allowing it to come to room temperature) and I have noticed that if it is too soft, the unbaked cookies are not as stackable and stiff and it also comes from the amount of flour I use in the recipe (more than typical). I played around with the amount of flour I use, too much and the cookies tasted pasty, too little and they were spreading too much. I hope that helps!

Do you take orders that are mailed? I love sugar cookies, but I am not good at making them. Yours look so beautiful & you look like you’re very organized. When you used that special tray for the sanding sugar, I was really pleased & thought, a girl after my own heart. When I’m using ingredients like that I do it over a paper plate. @joejohnson5657 - Start with a recipe, mine has three ingredients (confectioners sugar, aka icing sugar, meringue powder and water). You can find a lot of recipe tutorials online. The trick is the consistency and practise makes perfect.

When you used that special tray for the sanding sugar, I was really pleased & thought, a girl after my own heart. When I’m using ingredients like that I do it over a paper plate. When I’m done I fold it in half & slowing pour it back into the original container. Why waste ingredients you’ve paid for with your hard earned money. Merry Christmas!

@joejohnson5657 - Start with a recipe, mine has three ingredients (confectioners sugar, aka icing sugar, meringue powder and water). You can find a lot of recipe tutorials online. The trick is the consistency and practise makes perfect.

@michellesaunders5005 thanks for your question. Gloves are not required by my board of health. I have a dedicated hand-washing sink that is used dozens and dozens of times daily. Much more hygienic than gloves. 🙂
QUESTION. If you can print designs, why do you bother to hand decorate any of them? Cute cookies!
@With-one-wing good question. I like printing some of the more intricate designs, especially ones with fine details, but I prefer the look of layers of icing.
