My wife’s favourite takeaway, by far, is chicken Chow Mein. I have studied numerous recipes and UA-cam videos to try and capture that unique ‘takeaway taste’. I failed. I think I was trying to add too many ingredients. I then tried this one. Cracked it. It’s awesome in its simplicity. My only variation is to stir fry cut up boneless chicken thighs in coconut oil, remove with a slotted spoon and then do the onions ( one small red and one small white).I add half a ringed small red chilli at this stage. Then re-add the chicken. The rest is identical to your excellent recipe. My wife, and family, absolutely love it. Thank you.

Firstly the presenters are superb and knowledgeable, secondly they're not afraid to share secrets and the main thing is, for me, they cook on home cookers which we can all relate to. There are some super Chinese chefs on UA-cam showing secrets but you both are the only ones who show it on a home cooked as opposed to the back end of an F16. I've loved watching your videos and I'm lucky enough to be able to get the ingredients relatively easily (live near to Birmingham) so I'll give it a go. Merry Christmas to you both! Damn it!!! It's the MSG I can't get hold of, they never have it in stock, though I still cook chow mein all the same. Mine actually tastes really nice, the beansprouts and mushrooms do compensate a little, as the soy sauce really brings out their flavour, but I bet the way you and your mum just taught me is gonna be even tastier, cheers.
This is so great as a starting point for experimentation too... Obviously everyone loves a classic chow mein but adding in some stir fried veg like the peppers, baby sweetcorn, even mange tout or thinly sliced carrot adds a couple of your 5 a day for the more health conscious... or if you fancy a bit of a kick some sliced chillis on top can make for a great meal.
There is one now lovely, I love to do tempura chicken with the salt, pepper, chilli seasoning to it, this guy has just saved me from poor tasting food xx

Love the food!!! Made homemade Chinese a few Sat ago for my sons. (s&s chicken balls, mushroom chow mien and duck and plumb sauce and egg fried rice!) my husband said it was from Ziang’s the newest gourmet Chinese restaurant in our village!! Lol they believed him till I asked them to help with the washing up!! Now all they ask for is “dinner at Zaing’s”. Your food is a hit!!! Tried many times to replicate a takeaways chow mein whilst cooking at home. Usually get the "fresh" egg noodles that any large super markets have near the vegetables section. Next time I will make sure I get some MSG too and follow your instructions to the letter! Excellent channel. Thank you very much.
Thank you so much for clearly showing the correct noodles. I find even in the Chinese supermarkets most of the egg noodles were not the ones the takeaways use. I can see these are the correct ones and cannot wait to try them.

I agree with you, I am a manager for the Chinese Buffet in Wakefield, and yes MSG is used and it enhances the flavour, its used in Salt & Pepper Chips, stir fried beans, and lots of other dishes, I have tasted all with no MSG added and they taste ok, but they do not have that unique taste. I use MSG in my home cooking also, especially if I have done a sunday roast, I add it to the gravy and it makes such a difference. People think MSG is bad for you, but it is not, it is very versatile and has so many uses, Try Salt & Pepper Chicken wings they are delicious
Hi Alex you are correct it’s not bad for you, we’ve owned takeaways now for 3 generations and have always used it. Salt and pepper chicken wings are amazing, been eating them since i could hold a chicken wing 🤣
@@ZiangsFoodWorkshop It is a shame you cannot buy MSG from supermarkers, I get it from work, or purchase it from Amazon , I don't know why people are scared to use it. the chef's who work at the chinese buffet have shown my a lot in creating good food, I manage a 400 seat capacity buffet restaurant and the food they create is amazing, and they use three turbo wok burners and 4 deep fryers its fantastic watching them when they are sending food out, the language barrier is sometimes difficult as I am english and they are all chinese so google translator is needed to talk to them

Some takeaways may also place potatoes starches onto their chickens. Towards my experience in working in takeaways, I've being told that dark soy sauce is really a decoration to make it look better and light soy sauce is better than dark soy sauce for you. But great man! Good video

Struggling to get my hands on decent noodles out here in Australia but the chow mein still tasted awesome. Thanks for the videos and keep up the good work guys.
Paul, I've found many UK ingredients are difficult to get out here (or impossible). My suggestion to you would be to go to an Asian Grocer and ask them for the noodles used by restaurants. I've been able to get a good one in 1 kg bags but can't remember the brand. Red, yellow and blue on the packet. I'm afraid Green Dragon Rice is not out here either but other fragrant Thai rice (Jasmine) is. Again, ask what the restaurants use. I've always found the people who runs the stores will tell you anything you ask, (provided they understand) and they will get a younger translator if necessary. Can't hurt to ask.
I now agree with you completely. Finding good Chinese egg noodles outside the supermarket range is difficult. Chinese grocery store is better but labels in Chinese is tricky. It appears that 2 "commercial" or "wholesale" brands are Hakka and Double Merino. The ones I referred to above are actually Hokkien noodles. I think they are just egg noodles. Not sure.
I remember buying Pearl River dark soy sauce from a lovely Chinese shop in Middlesbrough. That stuff was so nice you could drink it.. Also 'Chinese Taste Powder' (MSG) i was given by a good friend who was an amazing cook (Ka Ping Chen, or just Ping to his friends). I must get to a decent supermarket and stock up again, especially black beans in ginger. My late mum chucked mine way as 'they were out of date.' What part of 'preserved' didn't she understand lol. Great vid btw.. Chow Mein is my favourite, especially Char Sui.

What wok can you recommend that wont start sticking after a few washes?. I always follow the wash guides and never put in a dishwasher yet they still turn to shit.
I got one from the supermarket wing yip. Was only £7 and its carbon steel. You have to season it on first use and always remember to wash with just water after. I also just put a slight smear of oil after I use it too with a paper towel.
Great channel, Ive never cooked with MSG, But from what i have read half a teaspoon per pound of meat. So this just seems a lot. I used this recipe and it was great with no MSG But will use it the next time and without the blue dragon noodles. Lol

Could this be made without boiling the chicken prior? Maybe frying slices of chicken first, taking them out of the wok and then following your steps? Thanks.
Did this tonight plus a vegan version using rice noodles for my daughter, blind folded you wouldnt know that this did not come from a takeaway its that good, also guys have posted a shout out on my FB page advertising your cooking bible and how good it is added a link maybe get some interest.
I love this recipe. I always order this style of chow mein from my favourite takeaway. What I do notice however is that when I turn the the container onto the plate there is a very little gravy at the bottom. What should I add to this recipe to make a little more gravy for moisture?
Only beef there chicken is bought in pre cooked and its 80% chicken and 20% water and salt, its pummeped under high pressure, thats why you cant ever recreate it properly at home, you can get close
A quick question not really a big fan of the boiled chicken so what's best uncooked chicken then cook the chicken first or cook the chicken in the oven let cool the use

I've tried ur salt n chilli chicken and it's not quite as good. I did use supermarket 5 spice so that's probably why. I have authentic 5 spice coming today so trying it again tonight.

Don't get me wrong it was delicious, Really enjoyed it, so did my family. Iv got the real five spice now. Wil be sure to cook the msg and will throw in some fresh chilli too. My favourite place for salt n chilli chicken uses fresh chilli in it.

Sounds lovely, at home we only ever use chicken thigh, but takeways always breast which in my eyes is flavour less and less tender

Some takeaways may also place potatoes starches onto their chickens. Towards my experience in working in takeaways, I've being told that dark soy sauce is really a decoration to make it look better and light soy sauce is better than dark soy sauce for you. But great man! Good video

Paul, I've found many UK ingredients are difficult to get out here (or impossible). My suggestion to you would be to go to an Asian Grocer and ask them for the noodles used by restaurants. I've been able to get a good one in 1 kg bags but can't remember the brand. Red, yellow and blue on the packet. I'm afraid Green Dragon Rice is not out here either but other fragrant Thai rice (Jasmine) is. Again, ask what the restaurants use. I've always found the people who runs the stores will tell you anything you ask, (provided they understand) and they will get a younger translator if necessary. Can't hurt to ask.
I now agree with you completely. Finding good Chinese egg noodles outside the supermarket range is difficult. Chinese grocery store is better but labels in Chinese is tricky. It appears that 2 "commercial" or "wholesale" brands are Hakka and Double Merino. The ones I referred to above are actually Hokkien noodles. I think they are just egg noodles. Not sure.
I remember buying Pearl River dark soy sauce from a lovely Chinese shop in Middlesbrough. That stuff was so nice you could drink it.. Also 'Chinese Taste Powder' (MSG) i was given by a good friend who was an amazing cook (Ka Ping Chen, or just Ping to his friends).
I must get to a decent supermarket and stock up again, especially black beans in ginger. My late mum chucked mine way as 'they were out of date.' What part of 'preserved' didn't she understand lol. Great vid btw.. Chow Mein is my favourite, especially Char Sui.

I like it with sesame seed oil.. It gives it a slightly sweet smokey quality....
What wok can you recommend that wont start sticking after a few washes?. I always follow the wash guides and never put in a dishwasher yet they still turn to shit.
I got one from the supermarket wing yip. Was only £7 and its carbon steel. You have to season it on first use and always remember to wash with just water after. I also just put a slight smear of oil after I use it too with a paper towel.

Great channel, Ive never cooked with MSG, But from what i have read half a teaspoon per pound of meat. So this just seems a lot. I used this recipe and it was great with no MSG But will use it the next time and without the blue dragon noodles. Lol
You have to think with all the ingredients in there its probably way over a lb of food :)

How much msg do you use?
Normally about 1/4 - 1/2 tsp MSG. You dont need a lot in any recipe
I love this recipe. I always order this style of chow mein from my favourite takeaway. What I do notice however is that when I turn the the container onto the plate there is a very little gravy at the bottom. What should I add to this recipe to make a little more gravy for moisture?

So you never use potato starch etc to tenderise, how do takeaways get chicken so soft and tender
Only beef there chicken is bought in pre cooked and its 80% chicken and 20% water and salt, its pummeped under high pressure, thats why you cant ever recreate it properly at home, you can get close

Yes we use number1 but number 2 can be used , many places use them and not number 1

I've tried ur salt n chilli chicken and it's not quite as good. I did use supermarket 5 spice so that's probably why. I have authentic 5 spice coming today so trying it again tonight.

Don't get me wrong it was delicious, Really enjoyed it, so did my family. Iv got the real five spice now. Wil be sure to cook the msg and will throw in some fresh chilli too. My favourite place for salt n chilli chicken uses fresh chilli in it.
