This reminds me of the steamed unleavened rye bread full of seeds and grain kernels that we used to buy, imported from Europe, at a little German shop in our neighborhood when I was a child. I remember that my grandparents cajoled us into eating the German bread once in a while because it was "good for us." Eventually I learned to like it because of how much texture and flavor it had compared to American sandwich bread. I've never tried making my own, so thanks for posting this!
You can still find them in the USA. Lidl sells ir. Two varieties, maybe three. It is a square bread and it lasts a long time. It is dark or even almost black looking. Delicious. There is nothing quite German / Austrian bread. But overall in Europe bread is wonderful. In the USA, you rarely find fresh bread. Not even in Whole Foods. It tastes like day old bread.
Made it . Turned out beautifully. I didn't have hazelnuts or sunflower seeds so I substituted Brazil nuts and sprouted hemp seeds. Definitely a keeper I will be making it again. Thank you for the recipe.
Love your oven gloves! Will maybe try this in the winter as it's too hot at the moment to have the oven on for that length of time, and expensive too unless I can think of other things to cook at the same time.
So I make a chia seed flour bread based off a different recipe. While different, I feel I can add a tip that might help people. Use a mini-loaf pan. I ended up buying a King Arthur mini-loaf pan from their website. The size of them works well for smaller sandwiches, etc if you slice the mini-loaf into a top and bottom. You can easily adjust the thickness of these "bread slices" by adding more or less of the batter to increase the height. Another advantage of using a mini-loaf pan is that it makes it very, very easy to freeze some of the mini-loaves which can be important when using seeds, etc. My recipe obviously suffers drastic degradation since I grind up my chia seeds into a flour. The fat will go rancid quickly if I don't take measures. But, I can put some of them in vacuum seal containers that I keep in the freezer. This method allows me to keep them fresher for longer. Hopefully that helps someone.
Noooo you don’t grind the seeds. They need to be seen in the bread. Also, no they will not be just passed through because you’ll not just bite and swallow the bread. You’ll chew it in your mouth

You need to grind all the flax seeds. They will just pass through you if not ground. They’re too tough to digest and break down.

And the recipe does call for 50% ground….prob for binding quality.

Looks great but recommending vegetable oil. Research shows it’s very bad for you. You can use avocado oil if u don’t like olive oil.
