General question, for Great League, I understand that the best IV is 0/15/15. Would that be the same for Ultra League (assuming that I could reach cp2500)? Does it matter as much for Ultra League?

That is not a 100% rule. IVs depend of each Pokémon and the Cup you want to play on. For example, rank #1 Medicham for Great League is 5/15/15.
So the best approach is for you to check online or with an IV app for each Pokémon you're interested.
