Everybody have their own way of cooking things (different recepies) but I want to suggest two changes (or techniques). First is, hand tear the kaffir lime leaf right before adding it to the soup. The rips will allow the flavors to really come out. Second, add the lime juice last because cooking it can make it turn bitter. Also, I've had some in resturants that added too much lime juice, making it just plain sour. Adding it last allows you to add bit by bit to adjust the taste. It shouldn't be too sour so becareful on how much you really add. Good luck!
Yeah I was gonna say something similar. I don't even put lime juice for me lemongrass and lime leaves are enough. And I add a bit of red curry paste. No tomatoes too. And I prefer enoki mushrooms!

I like to put all the aromaticas in first with a little oil, soften, then add chicken stock (I make my chicken stock from a rotisserie children in the instat pot...quick, easy and flavorful. add the coconut milk and chicken, simmer, add Nước chấm(lime juice fish sauce sugar). serve, add basil and cilantro and chili oil . ps: I also add potatoes for extra heartiness

I know there are a lot of limitation cooking Thai food in America but I mean something is not supposed to be in there like tomato & onion are not even necessary in traditional Tom Kha Gai and also the chili powder (you can put more Thai bird chiles if you want more heat) plus I would recommend flavoring Tom yum with fish sauce instead of soy sauce and the taste would be much more different.

No. Ginger is totally different from galangal. Thai people do not use ginger in most of their cooking. Galangal may look similar to ginger, but they are totally not the same.
Galangal and Ginger are cousins they look similar on the outside but galangal is white mostly past the skin. And I found that galangal has more of a woodsy Piney smell compared to the warm spiciness add Ginger. There prep similarly with scraping the skin off but I have found galangal is much harder and woodier then the fibrous Ginger. Both can be kept in the freezer until needed.

This recipe could be solid if it weren't missing some proper technique. You never want to add lime juice into a soup that's still cooking. Direct heat will kill the brightness of lime juice. You should add it at the end, when the soup is already taken off the heat.

In fact we don't pound any ingredients in tomyum. We use only galangal root pieces,lemongrasses,kafir lime leaves,onion,meat,vegetables,fish sauce,lime juice and 'thai chilli paste'. and yeah... we don't use garlic in Tom Yum
In old days them add coconut milk to made Creamy Tom Yom, but today almost of recipes replace with fresh milk. I don't know why but original coconut milk in Creamy Tom Yum is the best. I can accept soy sauce to all my Thai food' recipes. If it salty it work. ( เซเว่นมันไกล)
