Episode 803: Cooking on the Sea of Cortez, Rick Bayless "Mexico: One Plate a Time"

- Rick is always up for a cooking challenge. After a day spent boating and kayaking on the Sea of Cortez with a local ecotourism group, Rick grills dinner for the group on the beach at Espiritu Santo island-one of the most biologically diverse marine areas in the world. The waters surrounding the island support coral reefs, colonies of sea lions and more than 500 species of fish. To stock up on supplies, Rick shops in the La Paz market for local cheese, fresh produce and chiles and on the island purchases seafood from a fisherman. Along the way, Rick learns from his guides about flying manta rays, dolphins, and the local flora. Then he grills fish and makes a stunning papaya salsa on the beach.

"The wind does not always cooperate"! Reminds me of a Thanksgiving dinner in a wash in the desert of Borego. We retreated to San Diego to a pretty gritty, somewhat overcooked and cold, but very memorable turkey dinner.

Fortún Ximenez “discovered” La Paz in 1533. He was killed by the indigenous inhabitants of the town after his crew began raping women and plundering people of their pearls, which they collected from oysters. Hernán Cortes arrived two years later and took possession of the town.

You lost me on "it was discovered"... Colinizers always colonizing. Mexico has a very long and rich history going back thousands of years. While the Spanish conquest is part of it and has in some ways enriched our culture and history, speaking as if everything started in the 1500s is offensive. Especially from someone who literally made a multi-million dollar career in appropriating Mexican food and culture. Unsubscribed. Do better. By the way, for your education, the Guaycura and the Pericúes were the indigenous peoples there.
