General Question. How would one go about actually constructing such a piece for real? Let's say it a table top design. Would the sections have to be steam bent? Or at the stadium scale, how do they make the mold to vast in cement or then even from wood... There's no video explaining how to realize these designs in real world. An pointers to source material or courses?
As you mentioned, it depends on you. Somebody can 3d print or project surface on the planar surface and divide them or surfaces can be simplified in flat surface. It will be different depending on designer's intention.

How to connect 2 deconstruct brep to loft? I cannot connect it both of the times only one can connect. Am i missing something? Thank you
Use Shift Key to connect both.

I recommend you to make your own boundary and trim spiral curves in the rhino space, and then reference them again to the script.
