Control theory time:
You can model steering as a control system: the car's step response has a very small time constant, while the ship's step response has a very large time constant, and the "step" in this case would be the finite angle by which the helm or steering wheel is turned. A car drives along mostly solid ground with no slip (there is slight strain in the road and a bit of give to the tires, but that's not much), so there are no transients or phase lag in its steering controls. Water, however, is viscous; it imparts shear stress on anything trying to move in it. The more speed at which the ship is turning, the more shear stress is applied, roughly speaking. Therefore, when you try to turn the ship, there is a force acting against you, which causes the lag between the phase of the rudder and the phase of the course. This is analogous to "viscous damping" in a mechanical system, which imparts a delay between input and response.

In a nutshell:
Steer slightly to start turn. Give time for boat to react. Use counter rudder to stop turn on new bearing, THEN center the helm.

Thanks for the video Mr. Lenz! Do you know anything about identifying a helm and what type of vessel it came off of? We have a charity store for animals and we obtained 2 helms from a naval officer who collected them. Both helms are 10 spoke wheels about 60 inches in diameter. Any help you may offer would be greatly appreciated. Thank You Sir.
