Ingredients:
For the shortcakes:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cut into small cubes
3/4 cup milk
1 teaspoon vanilla extract
For the strawberry filling:
4 cups fresh strawberries, hulled and sliced
1/4 cup granulated sugar
1 tablespoon lemon juice
For the whipped cream:
1 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
Cut in the cold butter using a pastry cutter or two knives until the mixture resembles coarse crumbs.
In a separate small bowl, whisk together the milk and vanilla extract. Gradually add the milk mixture to the flour mixture, stirring until a soft dough forms.
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together. Be careful not to overwork the dough.
Pat the dough into a circle about 1 inch thick. Use a biscuit cutter or glass to cut out rounds of dough. Place the rounds onto the prepared baking sheet, leaving a little space between each one.
Bake the shortcakes in the preheated oven for 12-15 minutes, or until they are golden brown on top. Remove from the oven and let them cool slightly on the baking sheet.
While the shortcakes are baking, prepare the strawberry filling. In a mixing bowl, combine the sliced strawberries, sugar, and lemon juice. Stir until the strawberries are well coated in the sugar mixture. Let them sit for about 15 minutes to macerate and release their juices.
In another mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract together until stiff peaks form.
To assemble the strawberry shortcakes, slice the cooled shortcakes in half horizontally. Place a spoonful of the strawberry filling on the bottom half of each shortcake, then top with a dollop of whipped cream. Place the other half of the shortcake on top.
Serve the strawberry shortcakes immediately, garnished with additional whipped cream and strawberries if desired. Enjoy this classic and refreshing dessert!
