Hello: I grew up in PI and currently live in CA USA and haven’t tasted this dish for a very long time. We used to go to this hole in the wall Chinese restaurant in SF that cooks similar recipe and we used to order it with my Filipino co-workers.

Just curious, but why do you soak the garlic bulbs in water? It is to make it easier to separate the cloves and peel them? Just sprinkle some rock salt and squeeze out the juice from the cut bitter melon. Most of the bitterness will be gone.
How I love ampalaya with itlog… it’s good for diabetes…. You can have your own ampalaya.. save the seeds then plant them…. Fresh harvested ampalaya is not bitter… it’s good for the anemia as well..
