there are a lot of different kinds of kimchi. My favorite is water kimchi. Its soo good with hot soup haha

@HE3991 it can be aged for days, weeks, months or years. A few days are actually enough. I just don't think the 2 days jack has are enough. But i know that there is also kimchi that just sits over night. Its with all those real traditional recipes. There are as much varieties as there are people who prepare it.
