The color of the Flower Jellies are determined by the Jelly they bloom from. The stronger the enchanted power, the more points for flower jellies.
Maybe it's one of the enchants u can get for the magic candy? Edit:okay so I checked the blessings u can get with pomegranates magic candy and indeed it is one of her blessings
