  • Shake, shake, shake, Senora? Getting’ Fizzy with it? No matter how you look at it, this cocktail is all about the shake. The Ramos Gin Fizz is another pre-prohibition cocktail. It was almost lost during prohibition but luckily its creator Henry Ramos was kind enough to publish the recipe in a New Orleans newspaper before his death. Originally when making a Ramos Gin Fizz, you had to shake it for a whole 12 minutes. Can you imagine? Can you imagine waiting that long for a drink? The reasoning behind that was that’s how long it took to get the right texture. We’re not going to spend 12 minutes of you watching me shake a cocktail (although the episode would have an avant-garde feel to it) Instead we’ll go over a couple different methods that will still give you that creamy, frothy top. There are so many flavors going on here and you don’t even taste the gin. As described by drinks historian Dave Wondrich, “It’s supposed to be a cloud you lay back on, sit back and float awhile.

    2 OZ - GIN
    1⁄2 OZ - FRESH LEMON JUICE
    1⁄2 OZ - FRESH LIME JUICE
    1 OZ - SIMPLE SYRUP (1:1 RATIO SUGAR:WATER)
    1 OZ - HEAVY CREAM
    1 FRESH EGG WHITE
    2 DROPS VANILLA EXTRACT (OPTIONAL)
    1 OZ - CLUB SODA
    3 DROPS ORANGE FLOWER WATER
    THE DRY SHAKE
    ADD ALL INGREDIENTS EXCEPT THE ORANGE
    FLOWER WATER TO A SHAKER. DRY SHAKE
    (WITHOUT ICE) FOR 20 SECONDS. LONGER
    IF YOU HAVE THE STAMINA.
    THE WET SHAKE
    ADD ONE ICE CUBE AND SHAKE AGAIN UNTIL THE ICE
    CUBE DISSOLVES. THIS MIGHT TAKE 1-2 MINUTES.
    POUR INTO A CHILLED 6 OZ GLASS. TOP WITH
    ORANGE FLOWER WATER. GARNISH ORANGE
    RIND (OPTIONAL).

    Hilarious! Best channel on UA-cam. Ive made this drink many times for girlfriends and now the wife and its always a big hit. At first glance the ingredients dont seem to make much sense but it really is delicious.

      I did it !! Works really well just need to change a little some quantities for the balance. That was great 😀
      But... when i wanted To clean my material i took the last drop in the shaker and warm was even better!!
      So i took a tiny pot, poor all ingrédients (just no more sparkling water on this one), and on small heat beat it until the egg does a nice form. Ouuuh that's was good and the texture so smooth !!! Thanks for you work it s give us great ideas

    I make a spin off of this I call "Grandma's Decorative Soap Basket." Instead of simple syrup, use 0.75oz grenadine, and 0.75oz Creme de Violette. *6* drops orange blossom water, and 6 drops rosewater. I also use *2* oz coffee cream to soften all that soapy flavour a bit more... but I don't shake until all the ice is gone. Honestly, who could bother? The drink is creamy and delicious without such nonsense.

    Ratios are fine but you wanna use Old Tom Gin for an authentic Ramos and if you want that big beautiful foam: Don't shake with soda. Dry shake and then shake with 2 ice cubes (depends on size, mine are 1in by 1in and two works perfect) until all of the ice is gone. Chill your glass! and then add a splash of soda to the bottom. Open pour that bad boy into the glass all the way to the top and then put the drink in the fridge for 3-5min. Take the drink out and poke a whole in the meringue, add more soda to the remnants of the drink in your tin and then pour through the hole and you will get a perfect cylinder of meringue an inch above the glass if youre careful.

      Your recipe sounds like a marvellous way to make a Ramos Gin Fizz. As Henry Ramos once said, "The secret of success lies in the good care you take and in your patience, and be certain to use good material." There are many ways to make a Ramos Gin Fizz. Old Tom Gin is authentic, but if you can't get it then you use what's available. Even the original recipe calls for 1 Tbsp powdered sugar, yet we often use simple syrup today, which is perfectly fine as it also adds a little more volume to the drink. Also, Henry Ramos used crushed ice, not cubed to shake. I prefer to shake all the ingredients, including the soda water together. It forms a froth with staying power. Also, shaking it up with the seltzer is from Henry Ramos's original recipe. Published in an article featured in New Orleans Item-Tribune, writer Don Higgins interviewed Henry Ramos and got him to hand over his recipe. Here is his recipe, verbatim:
      Ramos' Original Gin Fizz
      - One tablespoonful powdered sugar
      - Three or four drops of orange flower water
      - One-half lime (juice)
      - One-half lemon (juice)
      - One jigger of Old Tom Gin
      - The white of one egg
      - One-half glass of crushed ice
      - About two tablespoonful of rich milk or cream
      - A little Seltzer water (about an ounce) to make it pungent
      Together well shaken and strained (drink freely)

    I could totally go for one of these in the Big Easy, even if I'm more of an IPA, wine, or G&T guy. I'd add a few dashes of Angostura bitters at the end personally, but that's just me.

    When you add soda _prior_ to shaking, it's a gin _flat._ Nah, but seriously, I love these. A little more sour though- I prefer 3/4 oz of lime and lemon each, and a beer glass so there's more room for soda water. In my case it'll be all down the hatch before it has a chance to separate. This isn't a cocktail you want to give the chance to warm up. Oh, and I hate dry shaking, so what I do instead is simply give the ingredients a scramble with a fork, and I don't end up with eggy drink all over my hands.

    This one I'm practicing. One tactic I've seen is to pour half of the cocktail out, add your soda water, and pour the rest on top.
    problem is, when I do that I then get a bunch of foam on top that's hard to sip, meaning I can't drink this without a straw.
    I plan on being a bartender by this summer and I hope I don't ever have to make 3 of these one after the other.

    Hey Bruce, I see you have some Polish vodka there. How do you like Luksusowa? It's one of the few old PL vodkas still made out of potatoes.

      Thanks for noticing. However, that bottle of Luksusowa is actually a cherry flavoured vodka - Luksusowa Wisniowa Cherry Liqueur. It's made from real cherries (which is nice to know) and fine grain spirits. I like it because it's not syrupy sweet. It has a very light consistency which surprisingly lingers on as you sip. There's a real balance of spicy ginger mixed with the taste of sweet hard cherry candy. It also has a wine-like quality which I found interesting. I occasionally add a titch to my Manhattans, just to change things up. I've yet to try Luksusowa potato Vodka. I'll be on the lookout. Cheers!

      I would have to say the original flair bartender was "the father of American mixology", Jerry "The Professor" Thomas. He was well known for his showmanship as a bartender. Sometime before 1862, at the El Dorado gambling saloon in San Francisco, he developed his signature drink, the Blue Blazer. He would toss arcs of flaming whiskey back and forth between silver mugs. He was elaborate with technique and would juggle his bottles and cups. Look him up. Cheers!

    After attempting to make this for the 1st time today. (Because I actually have all the ingredients) I made a huge mess in the kitchen. He's not kidding when he says make sure your shaker is tight after putting in the soda water. Holy shit... Fucking gin fizz jizz EVERYWHERE

      I've always bought orange blossom water at my nearby grocery store. Making your own is very time-consuming. First, you have to pick the orange blossoms, clean them, crush them with a mortar and pestle and then mix with a little water and let bask in the sunshine for at least two weeks. You could try buying them off of Amazon. Cheers!

      Blending a Ramos Gin Fizz is a great cocktail hack. You can certainly make a beautiful Ramos Gin Fizz with a very stable head of fluffy, meringue-like foam in a blender. It makes less mess and is the easiest way to make this finicky, fussy cocktail. You just have to be careful with how much ice you use. Try a 1"x1" ice cube and blend it until it's gone. Cheers!
