      I split time between ny and key west. I own a restaurant that just turned 10! I was the chef but now I just cook privately for people.

    I'm going to have to try that recipe. We just got back from a 12 day Ketchikan adventure for our 40th wedding anniversary. I see you had your fish processed at Clover Pass. We stayed at a friends house next door to Clver Pass. Incredible fishery. Brought home 86# of halibut fillets. Keep video's coming.

    I tell you I have to be careful. I learn something new on every one of your videos on the cooking end and sometimes on the fishing end.
    If I’m gonna have to play the drinking game, I got to watch your videos later in the day on the weeks. My wife is working from home. She frowns upon me drinking at 8 AM especially when I’m in the tequila.

    Butane stoves ! Yes. I was an owner operator trucker and I cooked all over America with my butane stove. No carbon monoxide, so i cooked in the truck, in motel rooms, and everywhere in between. Now that I am landlocked in Colorado, I put two of them under my big steel griddle, and I can griddle inside or out, in the garage - anywhere. During the pandemic, I stayed in my studio in my garage to keep my mom safe - for like ...maybe 18 months. My butane stoves saved me/us. Great episode. Gonna spearfish out here soon, thanks to you know who....should be interesting.

      @@therune2you My mom used to use one in her little cabin cruiser. I used mine inside of two different trucks. (small areas). Plus, I put a carbon monoxide detector over one in my studio in my garage to show my band mates we wouldn't wind up dead on the ten o'clock news. I've seen people cooking on these on T.V ,inside, all over the world. I've been using them everywhere for 25 years. They are safe - but I appreciate the concern.

      @@bigcity2085 I appreciate your reply brother. I should have said in my other comment that it really sounded like you know what you're doing and it's been working for you for a long time. Someone experienced like yourself isn't who I'm worried about as much. I just wanted to add the disclaimer incase someone who might not be as mindful as you read your comment and assumed burning butane inside say a small tent was a good idea. I was always taught how dangerous carbon monoxide can be, specifically in camping circumstances.

      @@therune2you I hear you , because back in the day, there were tons of stories of people burning charcoal grills in their tents....and dying. Yes indeed - no charcoal in tents. However...you DO have to put your butane stove on something flat and firm. I will admit, I set one once on a vinyl bar stool,(stupid) and the vinyl got a little melted pattern on it. I actually wanted to send a gozillion of them to Ukraine...I did tell "Anna from Ukraine" about them. They cook and heat at the same time - this i know.

    For most recipes I like to blend my own spices. But for Japanese curry I just rock the Vermont Curry. I’ll be back in SE Alaska next summer. I think Halibut Katsu Curry will have to be on the menu when I return. That looks good.

    Halibut is a top 10 fish for me, especially since I've lived in AK and caught big barn doors. Awesome catch and cook!

    Great video Will! What an amazing time you guys must have had in Alaska fishing. I’m really looking forward to head to northern Vancouver island in 4 days for a 4 day fishing trip with my cousin.
    I really love that Colville Bay oysters shirt. Their operations are maybe 0.5 km from my sister-in-laws place in Souris West.
    Hard to beat halibut so long as you don’t overcook it. We can get it here in Nova Scotia pretty fresh this time of year & it freezes really well.
    That might have been one of my favourite dishes you’ve ever done.

    So I only got to take two shots out of my jar of Mississippi Shine! ( that’s enough farso!)…
    I missed what oil you used to fry your halibut???
    Thinking of doing this with some big thick fillets of Gulf flounder that we caught yesterday…
    We were one short of a two man limit which is 10 per person! (19).
    Gotta go to Alaska bro!

      And yeah! That’s a lot of “flatties”!!!
      We can keep 10 per person, 12” and up.
      We only keep 14” and up so you can imagine the size of the fillets!
      Had a few 18 to 20”!!!

      Washed 3 times, cooked with kombu then rice vinegar added after. So idk… is that white guy rice?

      @@CookingWithClams for fucking sure that's white guy rice. I can't speak for all Asians. Or probably any Asians. Rice is just rice and water. Almost all the time. It's a specific ratio... rice and the tip of your finger of water. I could probably argue a specific rice cooker . At least in Vietnamese family's. It's always the same rice cooker. Anyway. Just jokes man. Love your stuff keep on keeping on
