Easy Freezer Meal For Chris & Our Friends!!

    I hope you are doing wonderful! I loved meal prepping these freezer meals for my husband and sweet friends. These kept Chris well fed while I was out on tour and they were a blessing to our friends as they transitioned into becoming a family of 3!
    I want to prioritize making freezer meals more because they are so convenient when you don't feel like cooking or you have a busy schedule. Here are some of the recipes I made:
    BEST EVER BANANA BREAD:
    makes 2 loaves
    1 cup softened butter
    4 mashed bananas
    2 cups suagr
    4 eggs
    2 tsps vanilla
    3 cups flour
    2 tsps baking soda
    1 tsp salt
    1 tsp cinnamon
    1 cup sour cream
    Preheat oven to 350 degrees. In a small bowl mash bananas. In a large bowl mix softened butter and sugar until well combined and creamy. Add in your eggs 1 at a time and mix inbetween additions. Add vanilla and bananas. Next add in all your dry ingredients and mix until just combined. Lastly fold in sour cream. If you would like to add in any nuts or chocolate, do that after you fold in the sour cream.
    pour into 2 greased loaf pans and bake for 45-55 minutes or until set in the center. If you're making these into muffins, bake for 20-24 minutes.
    CHILI:
    1 pound ground beef
    9 oz beef chorizo
    1 white onion diced
    1 tbsp minced garlic
    1 can black beans (drained)
    1 can kidney beans (drained)
    1 can ranch style beans
    1 can rotel
    1 can tomato sauce
    2 cups beef broth
    1 tbsp oregano
    1 tbsp cumin
    3 tbsp chili powder
    2 tsp salt
    1 tsp pepper
    1 tsp paprika
    1 tbsp Worcestershire sauce
    Brown ground beef and chorizo. Add onions and saute until soft. add minced garlic and cook about 1 minute or until fragrant. Add in the rest of the ingredients and simmer.
    Rustic Bread:
    3 Cups Flour
    2 tsp Salt
    2 tsp Yeast
    1 1/2 Cups Warm Water
    If using active dry yeast: combine the yeast and warm water in a bowl and let sit until foamy. 5-10 minutes. If using instant yeast, just add it in to the bowl.
    Combine all ingredients and stir together. Dough should be sloppy and wet but not runny. If it is dry add a touch more water. Cover the bowl with plastic wrap and set aside to rise until doubled- about 2 hours OR place in the fridge to slow rise for up to 3 days! I like to stir this up at night, let it rise in the fridge while I sleep, and bake in the morning!
    30 minutes prior to baking, preheat oven to 450 degrees and place a dutch oven with a lid into the oven to heat up as well. Turn dough out onto a floured surface and form into a loose ball. Place the dough onto a piece of parchment paper and into the heated dutch oven. Cover with the lid and put back into the oven to bake for 30 minutes covered and 12 minutes uncovered.
    Breakfast Casserole:
    2 Cups Stale Bread
    6 Eggs
    1/2 Cup Milk
    1/2 lb Sausage
    1/2 Cup Cheddar Cheese
    1/2 tsp Salt
    1/2 tsp Pepper
    1/4 tsp Onion Powder
    Dash of hot sauce
    1 tsp Dijon
    Preheat oven to 375. Grease a casserole dish and tear or cut up 2 cups old bread. Add bread to bottom of the casserole dish. Brown Sausage. In a bowl combine eggs, milk, seasonings, hot sauce, & Mustard. Add sausage over the bread and then pour over egg mixture. Top with cheddar cheese. Bake for 30-35 mins.

    That was so fun and inspiring!❤ I often just set aside a couple of servings for the freezer of whatever I cook for dinner - chicken pot pie soup, egg roll in a bowl, chili, hash of some sort, breakfast burritos, etc., as well as keep hard-boiled eggs and cooked rice and/or potatoes in the fridge. I want to try your taquitos! They look so good! We call them flautas here in SoCal if they are made with flour tortillas, taquitos if made with corn tortillas. Often my husband will also grill up meat on Sunday for us to make salads with during the week too.

    Great video! My husband and I have a vacuum sealer, which is super awesome for freezer meals. I only freeze individual servings of tuna casserole so far, because I love it, but my husband does not love it. Then I label it with what it is and the date using a sharpie. When I'm ready for some tuna casserole, I just toss the frozen vacuum sealed package into boiling water and boil it for about 30 minutes. Comfort food.

    I love doing freezer meals too! I have a question on the banana bread recipe. Is that 2 tsp or tbsp of baking soda? The chili recipe I’ll be trying soon. I’ve never used chorizo or worstershire in my recipe, so anxious to try it!! Thanks for sharing your recipes and talent with the world! Congratulations on your tour with Blake!!
