Ok, so I’m a Medical Assistant, and we have this technique when we inject certain medications into people, we call it a Z-track. It prevents the medication from leaking out. So, I was wondering if this technique could be used to keep more of the marinade inside the meat? The technique is, to pull the surface/skin, put in the needle, inject, then immediately let loose of the skin/surface when pulling the needle out; this kinds “closes” the surface hole so the needed medication/substance doesn’t all leak out the hole the needle made. What do you think of using this technique for keeping more marinade inside the meat?

Another great walkthrough, I get my injectors from Tractor Supply and of they ask what I’m looking for they either are interested or look at me like I’m crazy. Apple jelly is an interesting one, I’ve not tried that. Question, I’ve never injected ribs but I know some people do, what’s your thought on that? Appreciate it Derrick!

You can use this injection with almost any cut of pork. You might want to adjust the spices to match the flavor you are looking for, but other than that, this will be great with pork leg.
