Some people who do not use chains are doing what refers to “working in the round.” They do not slip stitch to close the round, instead you make a stitch over top of the first stitch from your previous round. This type of method is also what gives you a “spiral” shape

Then you need to get yourself some 4 ply yarn. Or your projects are going to continue to come out BIG. Buy 4ply yarn and you will see a nice difference in your project. Good luck
You can also use a smaller hook to tighten the formation, that will reduce the size. Definitely best to buy 4ply/DK weight though if you can. I think milk cotton is lovely for this kind of project
